  • **This is the original recipe.
  • When I made it, I used cream of chicken soup because we don't like mushroom.
  • I also used bite sized pieces of stir fried chicken, but still cooked it for an hour.
  • I guess because it's covered in foil, it didn't dry out.
  • Was good enough for all 3 of us to like it!
  • *LOL*(that doesn't happen often) This would be a very easy recipe to double or triple!

Tips for Making the Best Vidalia Onion Chicken Casserole:

  • Use high-quality ingredients. Fresh, flavorful Vidalia onions are essential for this dish, as are tender, juicy chicken breasts. Use a creamy soup that you enjoy, and be sure to use a good quality chicken broth.
  • Don't overcook the chicken. Cook the chicken just until it is cooked through, or it will become dry and tough. If you're not sure if the chicken is cooked, use a meat thermometer to check the internal temperature. It should read 165 degrees Fahrenheit.
  • Let the casserole rest before serving. This allows the flavors to meld and the casserole to set. Letting it rest also makes it easier to serve.
  • Serve with your favorite sides. This casserole goes well with a variety of sides, such as mashed potatoes, roasted vegetables, or a salad. Feel free to add a side dish of cranberry sauce and stuffing for a complete holiday meal.

Conclusion:

Vidalia onion chicken casserole is a delicious and easy-to-make dish that is perfect for a weeknight dinner or a special occasion. It is creamy, flavorful, and satisfying, and it is sure to be a hit with your family and friends. So next time you're looking for a new and exciting way to enjoy chicken, give this casserole a try.
