Recipe video above. This Vietnamese lemongrass marinade is exceptional - you'll absolutely love it! This is one of my siganture recipes - it's as delicious as it is healthy, ideal for making ahead, for midweek meals and a cheap (impressive) meal idea for large groups. Time 30m

Number Of Ingredients 25

600 - 800g / 1.2 - 1.6lb chicken thigh fillets (, skinless and boneless or breast (or pork, beef or any seafood))
1 stalk lemongrass (, white part only, bruised them sliced into pieces easy to pick out later (Note 1))
2 garlic cloves (, finely chopped or minced)
2 tbsp lime juice
2 tbsp fish sauce ((Note 2))
1 tbsp soy sauce ((all purpose or light, NOT dark soy))
2 tbsp brown sugar
1 tbsp vegetable oil
1/4 cup fish sauce ((Note 3))
4 tbsp rice vinegar
2 tbsp white sugar
1/2 cup water
2 garlic cloves (, finely chopped)
1 red birds eye chilli (, finely chopped (Note 4))
3 tbsp lime juice
1/2 tbsp oil
200 g / 7 oz vermicelli noodles (, dried)
2 carrots (, julienned)
2 cucumbers (, julienned (optional: remove seeds))
5 cups iceberg lettuce (, finely sliced)
3 cups bean sprouts
Handful of mint leaves
Handful of cilantro/coriander
Sliced red chilli ((for garnish - optional))
Lime wedges ((to serve - optional but recommended))

Steps:

  • Combine Chicken and Marinade ingredients and set aside for at least 1 hour, up to 24 hours. (Note 4)
  • Heat 1/2 tbsp oil in a fry pan over medium heat (or heat the BBQ). Remove chicken from marinade, shaking off large bits of lemongrass (small bits should fall off during cooking).
  • Place chicken in the pan and cook each side until dark golden brown and chicken is just cooked through - about 6 to 8 minutes in total.
  • Remove from pan, shaking off any remaining bits of visible lemongrass and set aside to rest for 5 minutes. Then slice into thin pieces.
  • Combine the Nuoc Cham ingredients and mix well to dissolve the sugar. Adjust to your taste (spiciness, lime, sweetness) and set aside for at least 20 minutes.
  • Soak the vermicelli noodles in hot water for 3 minutes (or according to packet instructions), then drain and rinse under cold water to stop the noodles from sticking together.
  • Individual servings: Place noodles in bowl. Top with vegetables and herbs, and sliced chicken pieces. Drizzle with a few tablespoons of Nuoc Cham Sauce (be generous, ~ 4 tbsp per serving) and serve with lime wedges.
  • DIY (my preferred way): Place chicken, vegetables, herbs, noodles and sauce in separate bowls / piled on platters. Then let everyone make their own bowls!

GRILLED VIETNAMESE CHICKEN

Grilled Vietnamese Chicken image

This chicken is just full of flavor. Scoring the breast or thigh before marinating allows the marinade to penetrate the meat better and faster. I found this recipe in Cooking Pleasures Magazine and we just loved it. Another plus is a short marinading time that does not compromise the flavor at all. Longer would only make it better.

Categories     Lunch/Snacks

Time 30m

Yield 4 serving(s)

Number Of Ingredients 7

3 garlic cloves, minced
2 tablespoons fish sauce
2 tablespoons molasses
2 tablespoons lemon juice
1 tablespoon dark sesame oil
2 teaspoons black pepper (I use red pepper flakes and it was VERY good)
4 boneless skinless chicken breasts (thighs would work well too)

Steps:

  • Heat grill.
  • Place all the ingredients except the chicken in a shallow glass baking dish and stir them together.
  • Make shallow slits across the chicken breast, going a little deeper in the thick end.
  • Make shallow slits long ways, resulting in a slight diamond pattern in the meat.
  • Put the chicken in the marinade and make sure some gets in the slits.
  • This only needs to marinade for 10 or 15 minutes to pick up the flavor, I believe this is because of the slits.
  • Place on grill and cook for 8 to 10 minutes, until no longer pink.
  • Turn once during cooking.

RECIPETIN EATS' VIETNAMESE CHICKEN

RecipeTin Eats' Vietnamese chicken image

The beauty of this marinade is its versatility and the incredible flavour you can achieve with relatively few ingredients. Use it for chicken, pork, beef, tofu, fish or seafood. For authentic flavour, barbecue it if you can. And if you want to feel really smug, keep a stash of marinated meat in the freezer ready to thaw, then cook on demand.

Tips:

  • Choose the right cut of chicken: Chicken breasts or thighs are best for marinating, as they are more tender and flavorful.
  • Use a flavorful marinade: The marinade is what gives the chicken its flavor, so make sure to use a marinade that is packed with flavor.
  • Marinate the chicken for at least 30 minutes: The longer you marinate the chicken, the more time it has to absorb the flavors of the marinade.
  • Cook the chicken over medium-high heat: This will help to create a nice sear on the outside of the chicken while cooking it through the center.
  • Serve the chicken with your favorite sides: Rice, noodles, or vegetables are all great options.

Conclusion:

Vietnamese chicken marinade is a great way to add flavor to your chicken dishes. It is easy to make and can be used on a variety of chicken cuts. Whether you are grilling, baking, or frying your chicken, a Vietnamese marinade will help to make it delicious. So next time you are looking for a way to add some extra flavor to your chicken, give Vietnamese marinade a try.
