1/2 medium onion, minced
1 cup ketchup
1/2 teaspoon sugar
2 1/2 teaspoons dry mustard
1/4 teaspoon chili powder
1 1/2 teaspoons Worcestershire sauce
3/4 teaspoon cider vinegar
1/4 teaspoon cayenne pepper

  • Mix onion, ketchup, sugar, mustard, chili powder, Worcestershire sauce, vinegar, pepper. Pour on roast. Cook on low for 8 hours.
  • Remove pork from cooker; shred. Mix with sauce in cooker.

Tips:

  • Choose the Right Cut of Meat: Select cuts with a good amount of marbling, such as pork shoulder, ribs, or brisket. These cuts will stay moist and tender during the long cooking process.
  • Use a Quality Rub: A good rub is essential for adding flavor to your barbecue. Experiment with different combinations of spices and herbs to find your perfect blend.
  • Cook Low and Slow: Virginia barbecue is all about low and slow cooking. This allows the meat to absorb the flavors of the rub and smoke, and it also helps to tenderize the meat.
  • Use a Smoker or Grill: You can use either a smoker or a grill to cook your Virginia barbecue. If you're using a grill, be sure to use indirect heat to avoid burning the meat.
  • Baste the Meat Regularly: Basting the meat with a vinegar-based sauce or apple cider vinegar will help to keep it moist and flavorful.
  • Let the Meat Rest: Once the meat is cooked, let it rest for at least 15 minutes before slicing and serving. This will help the juices to redistribute throughout the meat, resulting in a more tender and flavorful barbecue.

Conclusion:

Virginia barbecue is a delicious and versatile dish that can be enjoyed by people of all ages. With its rich history and unique flavor profile, Virginia barbecue is a true American classic. Whether you're a barbecue aficionado or just looking for a new and exciting dish to try, Virginia barbecue is sure to please.
