  • Preheat oven to 350 degrees F. Combine flour, sugar, baking powder and salt in a medium mixing bowl. Whisk together egg, bananas, oil and vanilla. Add to flour mixture and stir until flour is moistened. Fold in walnuts. Spray 8-1/2 x 4-1/2 loaf pan with cooking spray. Pour batter into prepared loaf pan.
  • Bake for 35 to 40 minutes or until puffed and golden brown. A wooden pick inserted in the center should come out clean. Transfer loaf pan to a rack to cool for 10 minutes before turning out of pan. Serve warm or store in an air-tight container.

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
1/2 cup butter, room temperature
1/2-1 teaspoon vanilla (to your taste)
1 cup sugar
4 ripe bananas, mashed (preferably black-skinned)
1/2 cup roughly crushed walnuts
1/2 cup chocolate chips

Steps:

  • Sift the flour, baking soda and salt into a bowl. Set aside.
  • Whisk the eggs and the vanilla together. Set aside.
  • Preheat oven to 350°F.
  • Cream together the butter and sugar until light and fluffy (I use a Kitchen Aid stand mixer for this).
  • Gradually pour the egg mixture into the butter while mixing until incorporated.
  • Add the bananas and stir until incorporated.
  • Mix in the flour mixture until just incorporated with a spatula.

½ cup butter, divided
1 (16 ounce) loaf day-old French bread, cut into 1-inch cubes
1 cup chopped walnuts
4 eggs
1 cup heavy cream
1 (14 ounce) can sweetened condensed milk
1 (14 ounce) can coconut milk
1 cup brown sugar
4 teaspoons vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
1 pinch salt
4 very ripe bananas, mashed

Steps:

  • Grease a 9x13-inch baking dish with 1 tablespoon of butter; place the remaining butter in a saucepan over low heat, and melt the butter. Spread the French bread cubes out into the greased pan, and drizzle the melted butter over the bread.
  • Place the walnuts into a dry skillet over medium-low heat; cook and stir until the walnuts turn a light golden brown and give off a toasted fragrance, about 2 minutes. Watch carefully so they don't burn. Remove from heat, and transfer walnuts into a bowl immediately to cool. Set walnuts aside.
  • In a large mixing bowl, beat the eggs lightly just to break yolks, and mix in the cream, condensed milk, coconut milk, brown sugar, vanilla extract, cinnamon, nutmeg, allspice, and salt. It bakes quicker, stays moist, and goes a bit farther without my husband thinking he's not getting enough too.

3 over-ripe bananas
2 tablespoons lemon juice
1/2 cup unsweetened applesauce (I've used up to a total of 1 cup of applesauce if the mixture seems too stiff or dry)
1/2 cup packed brown sugar
2 cups flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/8-1/4 teaspoon cardamom
1 cup fresh blueberries
1/2 chopped walnuts

Steps:

  • Pre-heat oven to 350.
  • Spray two 8 x 4 loaf pans with non-stick spray.
  • In large bowl, blend together bananas, lemon juice, applesauce and brown sugar. I use a hand-held blender, which purres everything quickly and evenly.
  • In another large bowl, wisk together dry ingredients.
  • Add to dry mixture blueberries and nuts and toss until flour coated. This helps to prevent the berries and nuts from settling to the bottom during baking.
  • Add flour-berry/nut mixture to the moist-banana mixture. Mix together by hand folding contents until all is moistened being careful not to overmix.
  • Divide final mixture into the two loaf pans, spreading contents evenly. Place in oven center for about 35 to 40 minutes, until tooth pick comes out clean and the tops are lightly golden brown. I've found the tooth pick test happens first but wait about 5 or so more minutes for the tops to brown.
  • Remove from oven and cool. Even better when served the next day. I cut the loaves into 1 inch thick slices, serving 2 per person.
  • I've also substitued coarsely chopped sweet cherries (1 cup) and cinnamon (1 tsp) for the blueberries and cardamom. Very, Very good too, for all those cherry lovers out there!

  • Stir together the bananas, granulated sugar, Worcestershire sauce, oil, brown sugar and eggs in a medium bowl. Let rest at room temperature 30 minutes.

1 vanilla bean, split
10 cups of 1-inch cubes white bread (preferably from 1 large baguette)
2 cups 1/2-inch-thick banana slices

Banana caramel sauce

Steps:

  • Bring the cream to a simmer. Meanwhile, whisk yolks, sugar and salt until the sugar dissolves. Scrape the vanilla-bean seeds into the yolks and toss the husk into the cream.
  • Whisking constantly, pour a small amount of hot cream into the yolk mixture, then whisk in the rest. Strain through a fine sieve and discard the vanilla-bean husk.

1 tsp. baking soda
1/4 tsp. fine sea salt
6 tbsp. unsalted butter, room temperature

1 cup semisweet chocolate chips, 6 oz pkg.
1 cup coarsely chopped walnuts, toasted

Steps:

  • 1. Preheat oven to 350. Lightly butter a 9 x 5 inch loaf pan. Line bottom and long sides of pan with parchment paper. Butter the top of the parchment. Dust pan with flour, tapping out excess. Beat til smooth. Fold in chocolate chips and half of the walnuts. Pour batter into prepared pan and smooth the top. Sprinkle remaining walnuts on top. Bake til toothpick inserted in center comes out clean, about 1 hour. Transfer to wire rack and let cool in pan for 5 minutes. Turn out onto rack and remove paper. 2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 1/8 cups sugar
1/2 cup vegetable oil (i.e. canola oil)
2 tablespoons buttermilk
1/2 teaspoon vanilla extract
3 bananas (medium large, ripe and mashed)
1/2 cup chopped walnuts (for batter)
1/3 cup chopped walnuts (for topping)

Steps:

  • Pre-heat the oven to 325 degrees F; and grease a 9X5X3 inch loaf pan and dust with flour.
  • Blend together the flour, baking soda and salt, set aside.
  • Mix together the egg, sugar and vegetable oil until well combined; add the flour mixture, blend then add the buttermilk, vanilla, mashed bananas and mix until combined.
  • Fold in 1/2 cup chopped walnuts and pour batter into prepared loaf pan.
  • Top batter with remaining 1/3 cup chopped walnuts.
  • Bake for 45 to 60 minutes, until a wood pick comes out clean; cool for 10 minutes on a wire rack before removing the cake from the pan.
