CHOCOLATE CHIP WALNUT COOKIES

Chocolate Chip Walnut Cookies image

There is a special little bakery in New York City called Levain Bakery that makes seriously decadent and massively huge cookies, which are the inspiration for these giant treats. These oversized cookies are chewy on the inside and crispy on the outside with chunks of chocolate and slightly sweet walnuts studded throughout. The key to making them so chewy is using only dark brown sugar and skipping the granulated stuff altogether. The molasses in brown sugar gives the cookies the most ideal chewiness and just the right amount of sweetness.

Time 2h20m

Yield 16 to 18 cookies

Number Of Ingredients 11

2 3/4 cups all-purpose flour
1 1/2 teaspoons kosher salt
1 teaspoon baking powder
1 teaspoon baking soda
2 1/2 sticks (1 1/4 cups) unsalted butter, at room temperature
1 3/4 cups packed dark brown sugar
2 large eggs
2 teaspoons pure vanilla extract
One 12-ounce bag semisweet chocolate chunks or chips
2 cups walnut halves, roughly chopped
1 tablespoon flaky sea salt

Steps:

  • Sift the flour, kosher salt, baking powder and baking soda together into a large bowl.
  • Beat the butter and brown sugar in another large bowl with an electric mixer on medium-high speed, scraping down the sides of the bowl as needed, until pale and fluffy, about 4 minutes. (Use the paddle attachment for a stand mixer.) Beat in the eggs one at a time, then beat in the vanilla. Reduce the mixer speed to low. Add the dry ingredients and beat until combined. Fold in the chocolate chunks and walnuts by hand.
  • Press plastic wrap directly onto the surface of the dough and refrigerate for at least 1 hour or up to overnight.
  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment.
  • Use a 2-ounce ice cream scoop to scoop half the dough onto the prepared baking sheets, spacing about 2 inches apart (you should have about 8 cookies, roughly 3 1/2-ounces each, per baking sheet). Sprinkle the flaky sea salt on top of the dough balls.
  • Bake, rotating the pans from top to bottom and front to back halfway through, until the cookies are golden around the edges but still soft in the middle, 18 to 20 minutes. Let them cool for 10 minutes on the baking sheets, then transfer to a wire rack to cool completely, about 30 minutes.
  • Store the cookies in a tightly sealed container at room temperature for up to 5 days.

1/2 cup sugar
2 large egg whites
1/4 teaspoon salt
1/4 cup cake flour (not self-rising)
1/3 cup walnuts, toasted lightly and minced

Steps:

  • In a bowl with an electric mixer cream the butter with the sugar until the mixture is light and fluffy, add the egg whites and the salt, and beat the mixture for 10 seconds, or until it is combined well but not frothy. Bake the cookies in batches in the middle of a preheated 375°F. oven for 6 to 8 minutes, or until they are just firm enough to remove from the baking sheet. Working quickly with 1 cookie at a time, loosen the cookies from the sheet with a metal spatula and roll them quickly, rough sides out, around the handle of a wooden spoon or chopstick to form a thin cylinder, transferring them as they are rolled to a rack to cool. WALNUT REFRIGERATOR COOKIES

Walnut Refrigerator Cookies image

My friend, Carolyn, brought these cookies into the quilt shop where I work and I begged her for the recipe. This is a delicious, fast refrigerator cookie that has just the right amount of sweetness. I made a batch at my first opportunity and my hubby loved them as much as I did, especially with a hot cup of coffee. The rolls of dough would be great to put in the freezer too, so you could have these little gems whenever you want too.

Time 24m

Yield 30 cookies

Number Of Ingredients 10

1 1/4 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter or 1/2 cup margarine, softened
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 (6 ounce) package semi-sweet chocolate chips
1/2 cup chopped walnuts (optional)

Steps:

  • In a bowl stir together flour, baking soda, and salt to combine thoroughly; set aside.
  • Preheat oven to 375 degrees.
  • In mixer bowl combine butter and sugars; beat until fluffy and well blended.
  • Beat in egg.
  • Add vanilla and mix well.
  • Gradually add flour mixture until just blended.
  • Stir in chocolate chips and walnuts (if used).
  • Drop by rounded teaspoons, placed well apart, onto lightly greased or nonstick baking sheets.
  • Bake until cookies are well browned (12 to 14 minutes).
  • Cool on wire racks.

Tips:

  • Use high-quality ingredients. The better the ingredients, the better the cookies will taste. Look for walnuts that are fresh and plump, and use unsalted butter and pure vanilla extract.
  • Toast the walnuts. Toasting the walnuts will bring out their flavor and make them more fragrant. Spread the walnuts on a baking sheet and toast them in a preheated oven at 350 degrees Fahrenheit for 5-7 minutes, or until they are golden brown.
  • Don't overmix the dough. Overmixing the dough will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Chill the dough before baking. Chilling the dough will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies until they are just set. Overbaking the cookies will make them dry and crumbly. Bake the cookies for 10-12 minutes, or until the edges are golden brown and the centers are still slightly soft.

Conclusion:

Walnut cigarette cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their delicate flavor and crispy texture, these cookies are sure to be a hit with everyone who tries them. So next time you're looking for a sweet treat, give walnut cigarette cookies a try!
