This dessert is slightly exotic and is known by many people who have read the book 'The Lion, The Witch, and The Wardrobe'. This would do well for a tea party, a holiday party, or even if you just wanted to surprise someone.

1 ½ cups water
3 cups granulated sugar
3 tablespoons light corn syrup
½ cup orange juice
3 tablespoons orange zest
3 (.25 ounce) envelopes unflavored gelatin
¾ cup cornstarch
½ cup cold water
1 tablespoon vanilla extract
¾ cup chopped pistachio nuts
confectioners' sugar for dusting

Steps:

  • Bring 1 1/2 cups water, sugar, and corn syrup to a boil over medium-high heat in a large saucepan. Cook, stirring frequently, until the temperature reaches 240 degrees F (115 degrees C) on a candy thermometer. Set aside and keep hot.
  • Stir together orange juice and orange zest, sprinkle with gelatin, and set aside. In a small bowl, dissolve cornstarch in 1/2 cup cold water, then stir into hot syrup. Place over medium-low heat, and simmer, stirring gently, until very thick.
  • Remove syrup from heat, stir in orange juice mixture, vanilla, and pistachios. Sprinkle a 8x8-inch pan generously with confectioners' sugar. Pour the Turkish delight into the pan, and let cool in a cool, dry place (not the refrigerator) until set, 3 to 4 hours.
  • When cool, sprinkle the top with another thick layer of powdered sugar. Cut into 1-inch squares, and dredge each well with confectioners' sugar. Store at room temperature in an airtight container.

Posted in response to a request. I found this recipe in old book my mother had, and have tried to convert this recipe from metric to imperial. Some of the measurements may need a bit of tweaking. I have not made it myself as yet, but I will soon. Note - Kremelta is called Copha in Australia, and for those unfamiliar with Kremelta/Copha it is a vegetable shortening made from coconut oil. NOTE: I have since made this and was very disappointed. I will not be making it again.

8 ounces kremelta
1 cup coconut
4 cups corn flakes
3 tablespoons cocoa powder
1 cup icing sugar
7 ounces condensed milk (approx 1/2 of 14 oz can)
2 ounces butter
2 tablespoons golden syrup
1/4 cup brown sugar
1 teaspoon vanilla essence

Steps:

  • Melt the Kremelta, and mix in the coconut, cornflakes, cocoa and icing sugar until well combined.
  • Put 1/2 this mixture into a sponge roll tin, press firmly.
  • Leave in refrigerator to set.
  • Caramel.
  • Boil all ingredients gently together for 1 minute, stirring continuously.
  • Cool and pour over mixture in tin.
  • Spread the left over mix that formed the base on top.
  • Store in refrigerator.

1 pound walleye, pike, perch or trout fillets
2 teaspoons butter, softened
1 tablespoon lemon juice
1 tablespoon minced fresh basil or 1/2 to 1 teaspoon dried basil
1 teaspoon lemon-pepper seasoning
1/2 teaspoon garlic salt
1-3/4 cups sliced fresh mushrooms

Steps:

  • Coat an 18-in. square piece of heavy-duty foil with cooking spray Place fillets on foil. Spread with butter. Sprinkle with lemon juice, basil, lemon-pepper and garlic salt. Top with mushrooms. , Seal foil tightly. Grill, covered, over medium-hot heat for 5-7 minutes on each side or until fish flakes easily with a fork. Carefully remove foil to allow steam to escape.

This recipe is from a book my grandmother gave me. The front cover is missing so I'm not sure of the name of the book. My family all love this recipe. It's great for dinner on a cold winter's night. I serve it with creamed potatoes and crusty bread.

100 g butter
4 tablespoons plain flour
1/4 teaspoon salt
1 pinch cayenne pepper
2 teaspoons curry powder
1 teaspoon Worcestershire sauce
400 ml milk
1 (454 g) can canned tuna (I prefer salmon) or 1 (454 g) can canned salmon (I prefer salmon)
1/4 cup cream or 1/4 cup evaporated milk
3/4 cup tomato soup
breadcrumbs

Steps:

  • Melt butter in a medium saucepan; stir in flour, salt, cayenne, curry, sauces, and then gradually add the milk.
  • Stir while bringing to the boil; simmer 3 minutes.
  • Add fish, soup and cream.
  • Heat through and then pour into a casserole dish.
  • Top with breadcrumbs and brown under grill or in the oven.
