1 1/4 cups flour
2 tablespoons cocoa
1/3 cup sugar
1/2 teaspoon salt
6 tablespoons unsalted butter, chilled,cut into pieces
3 large egg yolks
1/2 teaspoon vanilla extract
1 cup chopped pecans
1 cup sugar
1/4 teaspoon salt
1/4 cup water
1 1/2 cups heavy cream
2 tablespoons unsalted butter, room temp
1 teaspoon vanilla extract
6 ounces bittersweet chocolate, finely chopped
cocoa, for dusting
24 pecan halves
3 cups sugar
3/4 cup water
1 teaspoon cream of tartar

Steps:

  • For the Chocolate Pate Sucree-----------.
  • Place the flour, cocoa, sugar and salt in the bowl of a food processor, pulse several times to combine Add the butter and pulse until the mixture resembles coarse meal, about 10 seconds Add the egg yolks and vanilla and process just until the mixture begins to hold together, no more than 30 seconds Turn dough out onto a lightly floured surface and form a disk.
  • Cover in plastic wrap, refrigerate for 30 minutes or until ready to use.
  • For the Tart----------------.
  • Preheat the oven to 350F degrees.
  • Roll the chocolate pate sucree to 1/8" thick and fit into a 9" fluted tart pan with a removable bottom Dock the bottom of the tart with a fork.
  • Refrigerate the shell for 30 minutes.
  • Place chopped pecans on a baking sheet and toast until slightly darkened and fragrant, about 10 minutes, set aside.
  • Line tart shell with parchment paper, pressing into edges and cover with dried beans or pastry weights.
  • Place on a baking sheet, bake for 20 minutes.
  • Remove paper and beans, continue baking until crust is golden, about 10 minutes.
  • Transfer to a wire rack and cool completely.
  • Make the caramel by placing the sugar, salt and water in a small saucepan.
  • Bring the mixture to a boil over medium high heat.
  • Wash down the sides of the pan with a wet pastry brush to prevent crystals from forming.
  • Cook, gently swirling (do not stir) until the caramel is a rich amber color.
  • Remove from heat and add 1/2 c of cream, butter and vanilla.
  • Stir until smooth.
  • Pour mixture into chocolate tart shell.
  • Sprinkle with toasted pecans and place in the refrigerator while melting the chocolate.
  • Place chocolate in a medium heat-proof bowl.
  • Bring remaining cup of cream to a boil in a small saucepan.
  • Pour over the chocolate, let sit for 5 minutes.
  • Stir until completely smooth.
  • Pour over caramel and pecans.
  • Return tart to refrigerator and chill for at least 1 hour.
  • To serve, dust the op with cocoa powder and garnish with Caramel-Dipped Pecans For Caramel-Dipped Pecans-----------------.
  • Gently insert an 8" wooden skewer into each pecan, set aside.
  • Prepare an ice bath, and set aside.
  • Combine the sugar, water and cream of tartar in a medium saucepan and bring to a boil over medium-high heat Wash down the sides with a wet pastry brush to stop crystals from forming.
  • Cook, without stirring until the mixture begins to brown.
  • Gently swirl the pan to color evenly.
  • Remove from heat when the caramel is a rich amber color, place the pan in an ice bath to stop the caramel from cooking, about 5 seconds.
  • Allow the caramel to sit, until slightly thickened for about 15 minutes.
  • When caramel is ready, dip pecans, lifting up and swirling slightly to fully coat.
  • Hold skewer over pan to allow the drip to lengthen and slightly harden, about 1 minute.
  • Place the skewers in a cube of flower foam to stand them upright, allow to completely harden.
  • Gently remove skewers before serving.

36 caramels
1 cup heavy whipping cream, divided
3-1/2 cups pecan halves

  • Preheat oven to 450°. Unroll pie crust on a lightly floured surface. 1 1/2 cups all-purpose flour
3/4 cup powdered sugar
1/2 cup unsweetened baking cocoa
1 teaspoon vanilla extract
1 teaspoon salt
2 2/3 cups unsalted butter, divided use
1 1/2 cups firmly packed brown sugar
2/3 cup honey
1/4 cup granulated sugar
3 cups pecan halves
1/3 cup whipping cream

Steps:

  • Preheat the oven to 350°F (175°C).
  • In a food processor, combine flour, powdered sugar, cocoa, vanilla and salt; process to blend.
  • With the motor running, gradually add 1-2/3 cup of the butter, a few tablespoons at a time.
  • Process until dough forms a ball on top of the blades.
  • Press dough into a 12-inch tart pan with a removable bottom.
  • Bake for 10 minutes or until light brown.
  • Set aside to cool.
  • In a large saucepan over medium-high heat, combine remaining 1 cup butter, brown sugar, honey and sugar; bring to a boil.
  • Boil for 3 minutes.
  • Add pecans and cream and return to a boil.
  • Immediately pour into cooled crust.

140g butter
100g golden caster sugar
225g plain flour
50g ground almond
1 egg , beaten
85g blanched hazelnut
50g golden caster sugar
200g dark chocolate (70% cocoa)
100g butter
splash Frangelico liqueur or brandy
1 egg
3 egg yolks

Steps:

  • Make the pastry. Cream together the butter and sugar, then add flour and almonds. Bring everything together with the egg. If the pastry is very soft, chill for 20 mins. If not, roll out to fit a deepish 23cm fluted flan tin; if the pastry breaks, press scraps of pastry into the gaps, leaving a slight overhang. Chill for 20 mins.
  • Heat oven to 200C/fan 180C/gas 6. Line the case with baking parchment and baking beans, then bake for 10 mins. Remove beans and cook for another 10 mins until golden.
  • Meanwhile, toast the nuts in a dry pan until starting to brown. Scatter over 4 tbsp of sugar, cook until it caramelises, then tip nuts onto a baking tray lined with parchment. Leave to cool, then roughly chop. Over a pan of barely simmering water, melt the chocolate, butter and alcohol together, then set aside to cool slightly. Over the same pan, beat the egg, yolks and remaining sugar until pale and fluffy. Take off the heat, then fold in the chocolate mix.
  • When case is cooked, remove from oven and turn the heat down to 160C/fan 140C/gas 3. Scatter most of the hazelnuts over the base, then tip in the chocolate mix, pressing it down slightly. Cook the tart for 15-20 mins until the chocolate has almost set. Leave to cool, then serve scattered with the remaining nuts. Can be made up to 1 day ahead.

Steps:

  • Preheat oven to 350 degrees. Butter four 6-ounce ramekins, then coat lightly with sugar, tapping out excess. In a microwave-safe bowl, combine butter and chocolate. 1 cup butter, cubed
1/2 cup heavy whipping cream

Steps:

  • Line an 8x4-in. loaf pan with plastic wrap; set aside. Sprinkle gelatin over bourbon; set aside., In a double boiler or metal bowl over hot water, melt chocolate and butter; stir until smooth. Add 1 cup cream and gelatin mixture; stir until gelatin is completely dissolved. Remove from the heat; cool slightly. Stir in pecans; cover and refrigerate for 20 minutes., In a small bowl, beat remaining cream until stiff peaks form. Fold into cooled chocolate mixture; transfer to prepared pan. 1 cup butter, cubed
8 ounces semisweet chocolate, chopped
1 ¼ cups white sugar
1 cup unsweetened cocoa powder
6 eggs
1 ½ cups white sugar
¼ cup water
1 ½ teaspoons fresh lemon juice
1 cup heavy cream
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter the bottom of a 10 inch springform pan, and line with parchment paper.
  • Melt the butter in a large saucepan over low heat. Stir in chocolate, and continue to stir until almost melted. Remove from heat, and stir until melted and smooth. In a large bowl, stir together 1 1/4 cups sugar and the cocoa powder. Whisk in the eggs until well blended, then whisk in the chocolate and butter. Pour the batter into the prepared pan.
  • Bake for about 45 minutes in the preheated oven. The cake is ready when the edges have nicely puffed and the surface is firm except for a small spot in the center that will jiggle when the pan is gently shaken. Cool cake in the pan over a wire rack. Run a knife around the sides of the pan to loosen the cake, then remove the sides of the pan, and invert onto a serving plate. Remove the parchment paper.
  • In a heavy saucepan, stir together 1 1/2 cups of sugar, water, and lemon juice. Bring to a boil over medium heat, and cook without stirring until the syrup is a deep amber color. For an accurate color check, dip a metal spoon into the syrup and lift it out of the pan to check the color. Once the syrup is amber, remove from the heat. Gradually stir in the cream. The mixture will bubble vigorously. If lumps form, stir gently over low heat to dissolve them. Stir in 2 tablespoons of butter.
  • Cut the cake into wedges while warm, and serve with caramel sauce spooned over it. You can also chill the cake and sauce, then warm again before serving.

Steps:

  • On a lightly floured surface, roll the dough out to a 12-inch circle, about 1/8-inch thick. Gently fit the dough into a 10-inch fluted tart pan with a removable bottom, easing the pastry gently into the bottom and sides. Trim the edges of the dough so that they overhang slightly over the edge of the tart pan, then fold this excess dough over the sides so that the outer edges are almost twice as thick as the bottom of the crust. Press so that the edges are flush with the top of the pan. Cover and refrigerate for at least 30 minutes or overnight. Preheat the oven to 350 degrees F and position a rack in the center of the oven. Line the tart shell with parchment paper and pie weights, beans, or rice and bake until set and the edges just begin to firm up, about 15 minutes. Remove the parchment and weights and bake until completely set, 10 to 12 minutes. Cool completely on a wire rack. Reduce the oven temperature to 325 degrees F.
