Time 21m

Yield 6 serving(s)

Number Of Ingredients 6

1 cup balsamic vinegar
1/2 cup granulated sugar
3 ounces soft blue cheese
1/2 cup finely chopped pecans or 2 ounces pecans
24 medjool dates or 1 lb medjool dates
canola oil cooking spray

Steps:

  • If using bamboo skewers, soak in water for at least 30 minutes.
  • Prepare the grill for direct cooking over medium heat (350° to 450°F).
  • In a small saucepan combine the vinegar and sugar. Bring to a simmer and cook until the mixture coats the back of a spoon, about 10 minutes, stirring occasionally. Set aside.
  • In a small bowl mash the blue cheese and pecans together with a fork. Make a small slice the length of each date and pull out the pit. Stuff each date with about 1 teaspoon of the cheese mixture, pressing it closed as much as possible. Thread two dates on each skewer so that the skewer goes through both halves of each date. Lightly spray with the canola oil.
  • Brush the cooking grates clean. Grill the dates over direct medium heat, with the lid closed, until heated through, about 1 minute.
  • Arrange the dates on a platter and let cool for 10 minutes. Serve the dates warm with the glaze.

Tips:

  • Choose ripe dates: Look for dates that are plump and have a deep brown color. Avoid dates that are dry or shriveled.
  • Use high-quality blue cheese: A good blue cheese will have a strong, pungent flavor. Look for a cheese that is made with raw milk and has been aged for at least 6 months.
  • Use thinly sliced prosciutto: This will help the prosciutto crisp up when it is cooked.
  • Cook the prosciutto until it is crispy: This will help to enhance the flavor of the prosciutto and make it more enjoyable to eat.
  • Serve the dates immediately: This will help to prevent the dates from becoming soggy.

Conclusion:

Warm dates with blue cheese and prosciutto are a delicious and easy-to-make appetizer. They are perfect for a party or a special occasion. The sweet dates, salty prosciutto, and tangy blue cheese complement each other perfectly. These dates are sure to be a hit with your guests.
