Time 4h

Yield 48 twists

Number Of Ingredients 9

1 cup warm water (about 100 degrees F)
1 1/4-ounce packet active dry yeast
3 cups all-purpose flour, plus more for dusting
1/2 cup plus 2 tablespoons granulated sugar
1 teaspoon salt
1 1/4 sticks (10 tablespoons) cold unsalted butter, cut into pieces
Vegetable oil, for the bowl
3/4 cup red sanding sugar
2 1/2 teaspoons ground cinnamon

Steps:

  • Pour the water into a small bowl, sprinkle the yeast on top and stir. Let stand until foamy, 5 minutes. Meanwhile, whisk the flour, 2 tablespoons granulated sugar and the salt in a large bowl. Work in the butter with your fingers until fine crumbs form. Make a well in the middle and pour in the yeast mixture. Stir until the mixture comes together into a shaggy dough. Turn out onto a lightly floured surface and knead a few times to bring the dough together into a ball (it will still be soft and sticky).
  • Coat a large bowl with vegetable oil, add the dough and turn to coat. Cover with plastic wrap and let rise in a warm place until doubled in size, about 2 hours. Press the dough down, cover and refrigerate overnight.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Mix the remaining 1/2 cup granulated sugar, the red sanding sugar and the cinnamon in a bowl. Turn out the dough onto a clean surface; pat into an 8-inch square, then cut into quarters.
  • Cut each dough quarter into 12 small squares. Sprinkle some of the red cinnamon sugar on the surface and roll each piece of dough in the sugar mixture into a 6- to 7-inch-long rope. Arrange 1 inch apart on the prepared pans, forming each rope into a horseshoe and crossing the ends.
  • Bake, switching the pans halfway through, until the cookies are firm, 30 to 35 minutes. Let cool completely on the pans. (These cookies are best the day they are baked.)

SPICY APPLE TWISTS (PILLSBURY BAKE-OFF WINNER)

Spicy Apple Twists (Pillsbury Bake-Off Winner) image

This was the 1958 Grand Prize Winner in the Pillsbury Bake-Off. Kudos goes to Dorothy DeVault of Ohio who created it. It's described as a miniature pastry-a lighter version of old fashioned apple dumplings. It would look divine served in a single serving glass dessert dish topped with a dollop of whipped cream and a cherry!

Tips:

  • Choose the Right Apples: For this recipe, firm and tart apples, such as Granny Smith or Honeycrisp, work best as they hold their shape well and provide a nice contrast to the sweet caramel coating.
  • Use Fresh Lemon Juice: Fresh lemon juice helps to prevent the apples from browning and adds a subtle tang to the caramel.
  • Make Sure the Caramel Is the Right Temperature: The caramel should be cooked to a temperature of 300 degrees Fahrenheit (150 degrees Celcius) before adding the apples. This ensures that the caramel is thick enough to coat the apples evenly and won't crystallize.
  • Work Quickly: Once the caramel is ready, work quickly to dip the apples and cinnamon twists. The caramel will start to set quickly, so it's important to have everything ready before you begin.
  • Be Careful When Frying the Cinnamon Twists: The oil should be at a temperature of 350 degrees Fahrenheit (175 degrees Celcius) before adding the cinnamon twists. This ensures that they fry evenly and don't burn.
  • Let the Apples and Twists Cool Completely: Once the apples and twists are coated in caramel, let them cool completely before serving. This allows the caramel to set and harden.

Conclusion:

This recipe for Warm Taffy Apples with Cinnamon Twists is a delicious and festive treat that is perfect for Halloween, Thanksgiving, or any other fall gathering. The apples are coated in a rich and gooey caramel sauce, and the cinnamon twists add a crispy and flavorful touch. Serve them warm with a scoop of vanilla ice cream or whipped cream for an extra special treat.
