CURRIED TUNA PITA POCKETS

Curried Tuna Pita Pockets image

A crunchy flavor packed tuna salad that would work great for lunch or a light supper. The original recipe first appeared in Jolie Warner's "take a can of tuna" and as presented includes my modifications. What distinguishes this recipe is the addition of fresh basil which adds a sweet grassy flavor in contrast to the heat of the curry. Serve sandwiches with a crispy salad and enjoy. You could also turn this into an entree salad and serve pita wedges on the side. As presented, this is intended to be eaten shortly after preparation. If you are planning to chill it a few hours, I would suggest scaling back the curry powder as the flavor grows stronger and overshadows the other flavors in the salad.

Tips for Making the Best Tuna Pita Pockets

  • Use high-quality tuna. Opt for solid white tuna packed in water or olive oil. Avoid tuna packed in vegetable oil, as it can be mushy and bland.
  • Flake the tuna well. This will help to ensure that the tuna is evenly distributed throughout the pita pocket and that it doesn't clump together.
  • Use a variety of vegetables. This will add flavor, texture, and nutrients to the pita pocket. Some good options include diced celery, chopped red onion, shredded carrots, and sliced cucumbers.
  • Don't be afraid to experiment with different herbs and spices. A little bit of cumin, paprika, or chili powder can add a lot of flavor to the tuna salad.
  • Use a good quality pita bread. The pita bread should be soft and pliable, so that it can be easily folded and filled.
  • Warm the pita bread before filling it. This will help to make the pita bread more pliable and easier to fold.
  • Don't overfill the pita pocket. You want to be able to fold the pita bread closed without it becoming too bulky.
  • Serve the pita pockets immediately. This will help to ensure that the pita bread stays crispy and the tuna salad stays cold.

Conclusion

Tuna pita pockets are a quick, easy, and delicious lunch or dinner option. They are also a great way to use up leftover tuna. With a few simple ingredients and a little bit of time, you can make a delicious and satisfying meal that the whole family will enjoy. So next time you're looking for a quick and easy meal, give tuna pita pockets a try!
