Time 40m

Yield 10 serving(s)

Number Of Ingredients 8

4 cups chicken, cooked
1 1/2 cups celery, choppd
1 cup water chestnut, drained & sliced
1/2 cup Miracle Whip
10 ounces cream of mushroom soup
1 cup mushroom, sliced
6 ounces seasoned stuffing mix
1/2 cup margarine

Steps:

  • Mix all ingredients (except stuffing and margarine) together in a 2 quart casserole.
  • Top with stuffing mix, combined with 1/2 cup margarine.
  • Bake at 350 for 1/2 hour or until bubbly.

Tips:

  • Choose fresh water chestnuts: Look for water chestnuts that are firm and have a smooth, unblemished surface. Avoid any that are soft or have brown spots.
  • Slice the water chestnuts thinly: This will help them cook evenly and absorb the flavors of the other ingredients.
  • Use a variety of vegetables: Feel free to add other vegetables to your casserole, such as celery, carrots, or peas.
  • Don't overcook the casserole: The water chestnuts should be tender but still slightly crunchy. Overcooking will make them mushy.
  • Serve the casserole hot or cold: Water chestnut casserole can be served as a main course or side dish. It's also delicious served cold as a salad.

Conclusion:

Water chestnut casserole is a delicious and versatile dish that can be enjoyed by people of all ages. It's a great way to use up leftover vegetables, and it's also a budget-friendly meal. So next time you're looking for a quick and easy dinner option, give water chestnut casserole a try.
