Categories     Melons

Time 25m

Yield 8-10 , 8-10 serving(s)

Number Of Ingredients 9

1 small red onion
2 -4 limes, depending on juiciness
48 ounces watermelon, flesh- sweet ripe
9 ounces feta cheese
1 bunch flat leaf parsley, chopped (optional)
1 bunch mint, chopped
3 -4 tablespoons extra virgin olive oil
4 ounces pitted black olives
black pepper

Steps:

  • Peel and halve the red onion and cut into very fine half-moons and put in a small bowl to steep with juice of two limes (more if they are dried up) to bring out the transparent pinkness in the onions and diminish their "onion-ness.".
  • Remove the rind and seeds (if necessary) from the watermelon, and cut into approximately 1 1/2 inch triangular chunks or use a melon baller. Cut the feta into similar sized pieces and put them both into a large, wide shallow bowl. Add chopped mint, along with sprigs of parsley if desired.
  • Pour onions, along with their juices, over the salad in a bowl, add olive oil and olives, then using your hands toss the salad gently so that the feta and melon don't lose their shape. Add a grinding of black pepper and taste to see whether the dressing needs more lime.

WATERMELON AND FETA SALAD

Watermelon and Feta Salad image

A take on the Mediterranean combination of watermelon and feta, this refreshing zinger of a salad couldn't be more perfect. Unassumingly simple, the sweet melon, salty cheese and fragrant basil reach their peak when doused with white balsamic vinegar and dribbled with fruity olive oil. Rather than building tall, this salad builds wide - so use a large platter for the most dramatic presentation. Vinegared watermelon does not keep its crisp, juicy texture well, so be sure to dress it (and eat it) the moment the last basil leaf falls.

Time 5m

Yield 4 servings

Number Of Ingredients 7

2 pounds seedless watermelon (without rinds), thinly sliced into large, irregular pieces
2 tablespoons white or red balsamic vinegar
Salt
1 (6-ounce) block Greek feta, thinly sliced into large, irregular pieces
3 tablespoons extra-virgin olive oil
Freshly ground black pepper
Leaves from 1 sprig basil, larger leaves torn

Steps:

  • On a large platter, arrange the watermelon and douse with the vinegar. Season with salt.
  • Arrange the feta over the watermelon and drizzle over the olive oil. Season with pepper.
  • Drop the basil leaves over the watermelon and feta. Serve immediately.

Tips:

- To pick the best watermelon, look for one that is symmetrical, has a deep yellow spot on the bottom, and sounds hollow when you tap it. - If you don't have feta cheese on hand, you can substitute crumbled goat cheese or ricotta salata. - To make the salad even more flavorful, try using grilled or roasted red onions instead of raw onions. - If you're looking for a vegan option, you can omit the feta cheese and add in some chopped walnuts or almonds for a crunchy texture. - For a refreshing summer salad, chill the salad for at least 30 minutes before serving.

Conclusion:

This Watermelon Feta Onion and Black Olive Salad is a delicious and easy-to-make salad that is perfect for summer. It is light, refreshing, and packed with flavor. The combination of sweet watermelon, salty feta, sharp red onion, and briny black olives is simply irresistible. This salad is also very versatile.
