2 weetabix, crumbled
5 oz. light brown soft sugar
6 oz. mixed dried fruit
1/2 pint milk
1 egg, beaten
8 oz. self-raising flour

Steps:

  • 1. Place the weetabix, sugar, milk and fruit into a mixing bowl. 2. Cover and leave overnight 3. In the morning, add the beaten egg and the flour and mix well. 4. Place the mixture into a lined loaf tin (2lb. size) 5. Bake in the centre of the oven (362F) for about an hour. 6. Test with a skewer to check that the cake is cooked and turn out onto a cooling rack. When cool, slice, butter and enjoy

Tips:

  • Use ripe bananas: Overripe bananas add a natural sweetness and moistness to the cake.
  • Mash the bananas well: Make sure the bananas are mashed until smooth so that they evenly distribute throughout the cake batter.
  • Don't overmix the batter: Overmixing can result in a tough, dense cake. Mix the batter just until the ingredients are combined.
  • Bake the cake at a moderate temperature: A moderate oven temperature (350°F) helps to prevent the cake from overcooking and drying out.
  • Let the cake cool completely before frosting: This will help to prevent the frosting from melting and sliding off the cake.

Conclusion:

Weetabix cake is a delicious and easy-to-make treat that is perfect for any occasion. It is a great way to use up overripe bananas and makes a fun and unique birthday cake. With a few simple tips, you can make a Weetabix cake that is moist, fluffy, and delicious.
