SPINACH SALAD WITH PEARS, ALMONDS AND CRANBERRIES WW 4 PTS

Spinach Salad With Pears, Almonds and Cranberries Ww 4 Pts image

A salad that serves well as a light meal. Received at a Weight Watchers meeting. 4 WW points per serving. The original recipe suggests using a red pear for color, but adds that you can substitute any ripe pear. Also, if you can't find roasted almonds, roast your own by spreading almonds on a baking sheet and roasting them in a 350 degree oven for 10 minutes. In summer months, you could easily swap ripe peaches or nectarines for the pears.

1 medium granny smith apple, diced
2 green onions, sliced
1 large jalapeno pepper, seeded and minced

Tips for a Refreshing Weight Watchers Spinach and Fruit Salad:

  • Use fresh, crisp spinach: Wilted or limp spinach will not make for a refreshing salad.
  • Choose a variety of fruits: This will add color, flavor, and nutrients to your salad.
  • Keep the fruit pieces small: This will make them easier to eat and mix with the spinach.
  • Add a light dressing: A simple vinaigrette or a yogurt-based dressing is a good choice.
  • Serve the salad immediately: This will prevent the spinach from wilting.

Conclusion:

This Weight Watchers spinach and fruit salad is a delicious and refreshing way to get your daily dose of fruits and vegetables. It's perfect for a light lunch or dinner, or as a side dish. With only 3 Weight Watchers points per serving, it's a healthy and guilt-free way to enjoy a tasty salad.
