1/8 teaspoon red pepper flakes
1 cup roasted pepper pasta sauce
3 no-boil lasagna noodles, halved crosswise

Steps:

  • Preheat oven to 375°F Spray 2 (5 inch) square baking dishes or 2 (1.5 x 5.75 x 8 inch) foil pans with nonstick spray.

1 cup canned diced tomato, fire-roasted, drained
1 cup part-skim ricotta cheese
1 cup shredded part-skim mozzarella cheese, cheeses

1/4 cup fat free egg substitute
1/4 teaspoon table salt
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
6 item(s) dry lasagna noodles, regular or whole-wheat
1/2 cup roasted red pepper, water-packed, cut into thin strips

Steps:

  • Preheat oven to 350ºF.

1 lb lean ground beef (I used very lean ground beef with only 4% fat but I think this will also work with ground turkey too)
1 onion, chopped
1 garlic clove, minced
1 (28 ounce) can tomatoes, crushed
1 (15 ounce) can tomato sauce
1 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes
1 cup part-skim ricotta cheese
1 1/2 cups lowfat mozzarella cheese, shredded (I used WW mozzarella)
6 lasagna noodles
1/2 cup parmesan cheese, shredded

Steps:

  • In a large skillet over medium high heat brown beef, onion and garlic, stirring to break up beef (5-10 minutes) until meat is brown.
  • Stir in next 6 ingredients (tomatoes - red pepper flakes) and simmer another 5 minutes.
  • Meanwhile in a small bowl combine ricotta and 1 cup of the mozzarella.

part-skim ricotta cheese
1 (5 ounce) package Baby Spinach, coarsely chopped
3 -4 portabella mushrooms, gills removed halved and thinly sliced
1 small zucchini, quartered lengthwise and thinly sliced

1 (28 ounce) can diced tomatoes
3 garlic cloves, minced
1 pinch crushed red pepper flakes (optional)
15 whole wheat lasagna noodles, uncooked (about 12 ounces)

Steps:

  • Combine egg, ricotta, spinach, mushrooms and zucchini in a large bowl.

1 teaspoon fennel seed
1 teaspoon olive oil
1/2 lb lean ground beef (10% or less fat)
1 onion, chopped
1 red bell pepper, seeded and chopped
1 zucchini, chopped
2 (15 ounce) containers refrigerated marinara sauce
1 1/2 cups fat-free ricotta cheese
1/2 cup shredded part-skim mozzarella cheese
1/4 cup pecorino romano cheese

Steps:

  • Cook the lasagna noodles according to package directions.
  • Drain, rinse with cold water and set aside.
