4 cups flour
2 cups sugar (I would probably reduce it due to the Coco Lopez)
1 teaspoon cinnamon
1 teaspoon nutmeg
2 teaspoons vanilla
2 teaspoons baking powder
1 cup milk
1/2 cup Coco Lopez
4 tablespoons sour cream
1 teaspoon salt
4 eggs, beaten

Steps:

  • Mix all ingredients -- mixture will be thick. Separate into two 5x9 inch loaf pans and cook at 350 degrees for one hour or until done. Serve warm.

1/2 cup (1 stick) unsalted butter, softened

About 1/4 cup milk

Steps:

  • Using an icepick, pierce the three soft spots on the coconut. Drain the liquid and store in the refrigerator. Break the coconut into chunks and grate the flesh into a small bowl. You need at least 1 cup; more is even better.
  • Heat the oven to 325 degrees. Grease a 9-by-5-inch loaf pan.
  • In a small bowl, stir together the flour, baking powder, salt and coconut flakes.
  • In a large bowl of an electric mixer, cream 1/2 cup of the sugar with the butter until light and fluffy. Beat in the eggs, then the vanilla.

3 cups all-purpose flour
1 teaspoon baking powder

1 cup buttermilk
1 cup sweetened shredded coconut
1 cup chopped walnuts

Steps:

  • In a large bowl, combine the sugar, oil, eggs and extract. Combine the flour, baking powder, baking soda and salt; add to sugar mixture alternately with buttermilk, stirring just until moistened.   • Preheat oven to 350°F. Butter and flour a 9- by 5- by 3-inch loaf pan, knocking out excess flour.
  • Toast and grind coconut:
  • Spread 3 cups coconut in a large shallow baking pan (1 inch deep) and toast in middle of oven, stirring occasionally, until evenly golden brown, 20 to 25 minutes.
