Western Macaroni and Cheese Dinner image

Can't remember if I got this off the Mac 'N Cheese box or where. It's a great way to change up plain old mac 'N cheese. Comfort food! If you have leftover fresh broccoli stems, chop them up and drop them in the boiling water with the noodles. I adjusted the recipe a bit.

I guess you can tell that I am into making comfort food since winter is upon us. This is a delicious mac and cheese recipe made on the stove top. It comes together quickly , is easy to make, and has a great flavor from the combination of mild and sharp cheeses. Sometimes, I add a topping and put it under the broiler for a few...

Time 30m

Number Of Ingredients 9

1 12 ounce box rotini pasta, regular or gluten free
16 ounces original vleveeta cheese
8 ounces vermont extra sharp cheddar cheese, grated
2/3 cup milk
1 tablespoon olive oil
2 teaspoons salt, divided
1/4 teaspoon white pepper
1/4 teaspoon dry mustard
1/8 teaspoon dry turmeric

Steps:

  • 1. Boil the pasta until al dente or to your taste.
  • 2. Don't overcook.
  • 3. Melt the 16 ounces of cubed Velveeta cheese and the 2/3 cup of milk. I don't have a double boiler, so I use one pot inside the other and fill the bottom pot with about 2 inches of water. Whisk the mixture until it melts.
  • 4. Then add the 8 ounces of Vermont White Cheddar Extra Sharp grated cheese.
  • 5. Whisk it into the mixture.
  • 6. Add the seasonings: 1 teaspoon salt, 1/4 teaspoon ground white pepper, 1/4 teaspoon ground mustard, 1/8 teaspoon turmeric. Stir.
  • 7. When the pasta is done, drain it well. Return the pasta to the hot pot.
  • 8. Add the one tablespoon of oil to the hot drained pasta and one teaspoon of salt. Toss until the pasta is covered with the oil.
  • 9. Pour the hot cheese sauce over the hot pasta, and gently combine it. Some people like all of the sauce. Until you find out what you like, add the sauce slowly and taste as you go. I pull back just a little and reserve about a half cup or more of the sauce to use over steamed vegetables later.
  • 10. Serve the pasta in a pretty dish.
  • 11. Add some parsley for garnish, if you wish.
  • 12. Here's a closeup.
  • 13. Sometimes, I like a topping. You can take 1/2 cup of panko bread crumbs, add 1 tablespoon of olive oil, and mix it well with your fingers, then sprinkle the mixture on top of the cheese dish and broil under the broiler until it is brown, just takes a few minutes.

WESTERN TRAIL BEEF AND MACARONI

Western Trail Beef and Macaroni image

I found this on a package of beef stock and this recipe is basically unchanged from that. I found there to be a bit too much liquid and after cooking the pasta I needed to boil it down slightly to thicken it up some.

Tips:

  • Choose the right pasta. Macaroni is the classic choice for Western macaroni salad, but any short, sturdy pasta will work. Penne, rotini, and elbow macaroni are all good options.
  • Cook the pasta al dente. This means cooking it until it is tender but still has a slight bite to it. Overcooked pasta will become mushy in the salad.
  • Use a good quality mayonnaise. The mayonnaise is the base of the dressing, so it's important to use a good quality one. Look for a mayonnaise that is made with real eggs and oil, and avoid brands that contain a lot of fillers.
  • Add some vegetables. Vegetables add color, crunch, and nutrients to the salad. Some good options include celery, carrots, red onion, and bell pepper.
  • Use a variety of cheeses. Cheese is another important ingredient in Western macaroni salad. A good combination of cheddar, mozzarella, and Parmesan cheese will give the salad a rich and flavorful taste.
  • Season the salad to taste. Salt and pepper are essential seasonings for Western macaroni salad. You can also add other seasonings, such as garlic powder, onion powder, or paprika, to taste.
  • Chill the salad before serving. Western macaroni salad is best served chilled. This allows the flavors to meld together and the salad to firm up.

Conclusion:

Western macaroni salad is a classic American side dish that is perfect for potlucks, picnics, and barbecues. It's easy to make and can be tailored to your own taste. With a few simple tips, you can make a Western macaroni salad that everyone will love.
