WHEATBERRY SALAD WITH DRIED CRANBERRIES AND GOAT CHEESE

Wheatberry Salad With Dried Cranberries and Goat Cheese image

A wheatberry is the whole wheat kernel. You can grind it to make flour, but if you boil it like a bean, you're left with a delicious whole grain that has a nutty flavor and pops in your mouth when you eat it. This simple wheatberry salad from Kim Quay, the owner of Comfort Food, a catering and prepared food business in Morrisville, Pa., is made with dried cranberries, sautéed red onion, carrots and celery then tossed with a light mustard vinaigrette. For a vegan version, omit the goat cheese.

Tips for Making Wheat Berry Salad with Artichokes and Cranberries

  • Use high-quality ingredients. This means using fresh, organic produce whenever possible. It also means using good-quality wheat berries, artichokes, and cranberries. Look for wheat berries that are plump and firm, artichokes that are tightly closed and have no brown spots, and cranberries that are bright red and tart.
  • Cook the wheat berries properly. Wheat berries need to be cooked until they are tender but still have a slight bite to them. The best way to do this is to cook them in a pot of boiling water for about 30 minutes, or until they are doubled in size and soft. You can also cook wheat berries in a slow cooker on low for 8-10 hours.
  • Prepare the artichokes and cranberries in advance. Artichokes can be a bit time-consuming to prepare, so it's best to do it in advance. You can steam or boil the artichokes until they are tender, then remove the leaves and choke. You can also buy pre-cooked artichokes, which will save you time. Cranberries can be dried or fresh. If you're using fresh cranberries, you'll need to rinse them and remove any stems. If you're using dried cranberries, you can soak them in water for a few minutes to plump them up.
  • Assemble the salad just before serving. This will help to prevent the salad from getting watery. You can either toss all of the ingredients together in a large bowl, or you can arrange them on individual plates.

Conclusion

Wheat berry salad with artichokes and cranberries is a delicious and healthy salad that is perfect for any occasion. It's packed with fiber, protein, and nutrients, and it's also very flavorful. This salad is sure to be a hit with your family and friends.
