STABILIZED WHIPPED CREAM ICING

Stabilized Whipped Cream Icing image

This cream holds up longer on pies because it doesn't separate. Gelatin stiffens whipped cream and makes the texture seem fuller and slightly spongy. May be used to top a pie or frost a cake.

WHIPPED CREAM FROSTING

Whipped Cream Frosting image

Whipped cream is a light and simple option for frosting cakes and cupcakes, especially when paired with fresh fruit. The trick is making sure it doesn't get too soft before it's served. Some cooks mix in cream of tartar, which can add a sour note. We prefer powdered milk. It helps create a frosting that's stable enough for piping and layering without affecting the taste

Provided by Food Network Kitchen

Time 10m

Yield 4 cups

Number Of Ingredients 4

1/4 cup confectioners' sugar
2 teaspoons non-fat or skim powdered milk
2 cups cold heavy whipping cream (see Cook's Note)
2 teaspoons pure vanilla extract

Steps:

  • Place a large mixing bowl or the bowl of a stand mixer in the freezer until cold, about 5 minutes. Alternatively, fill the bowl with ice water and let stand for 5 minutes. Pour out the ice water and quickly wipe the bowl dry.
  • Sift the sugar and powdered milk into the chilled bowl, then add the cold cream and vanilla. Whip the mixture on high speed until stiff, but smooth peaks form, about 2 minutes. If you accidentally overwhip, the peaks will look like they are cracking. Add about a tablespoon more heavy cream and hand whip the frosting until it smooths out.
  • The recipe makes enough frosting to generously top 24 cupcakes or to cover two 8-inch-round cakes, plus extra to pipe decorations. Unrefrigerated, the frosting will hold its shape for up to 6 hours.

WHIPPED CREAM

Whipped Cream image

There's little more simple, or delightful, than whipped cream. This version makes it extra special, infusing the cream with a vanilla bean to elevate its flavor. But you can steep the cream for less than 24 hours, or not at all, for a treat that can bring joy to even the most jaded of hearts.

Provided by Jonathan Reynolds

Categories     easy, quick, dessert

Time 15m

Yield 4 cups

Number Of Ingredients 3

1 pint heavy cream
Vanilla bean (or extract) to taste
3 tablespoons sugar

Steps:

  • Infuse the cream with vanilla bean in the refrigerator for 24 hours. Discard the bean. Whip the cream, sugar and vanilla extract (if not using bean) to soft peaks.

Tips:

  • Use cold ingredients. This will help the whipped cream icing to thicken properly and stay fluffy.
  • Beat the whipping cream on medium speed. If you beat it on too high of a speed, you'll end up with butter instead of whipped cream.
  • Add the sugar gradually. This will help prevent the whipped cream from curdling.
  • Don't overbeat the whipped cream. Once it starts to thicken, stop beating it. Otherwise, you'll end up with whipped cream that is too stiff.
  • Flavor the whipped cream to your liking. You can add vanilla extract, almond extract, or even chocolate chips.

Conclusion:

Whipped cream icing is a delicious and versatile frosting that can be used on a variety of desserts. It's easy to make and can be flavored to your liking. With these tips, you can make perfect whipped cream icing every time.
