This busy diva does not have time for a complicated side dish -- so out of my kitchen came these mashed sweet potatoes and pears. I may never make sweet potatoes any other way ever again.

2 pears, peeled and sliced
½ cup dry white wine
¼ cup water
3 sweet potatoes, peeled and cubed
1 cup evaporated milk
¼ teaspoon vanilla extract
¼ cup brown sugar
2 tablespoons butter
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Place the pears, wine, and water in a small saucepan and bring to a boil over high heat. Turn heat to medium-low and simmer until pears are soft, about 5-10 minutes. Remove pears from wine and reserve.
  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to potatoes to steam dry for a minute or two.
  • Stir the reserved pears, evaporated milk, vanilla, brown sugar, butter, cinnamon, and nutmeg into the sweet potatoes and mash until smooth. Transfer to a serving dish and serve hot.

1/2 cup orange juice
1/2 cup heavy cream
6 tablespoons butter
1/4 cup light brown sugar
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon

4 bosc pears, peeled, cored, cut into 8
1/4 cup light brown sugar
1 teaspoon freshly grated fresh ginger

  • bake in oven 375 F oven until soft-1 hour.
  • scoop out insideof potatoes when cooled.

1 medium sweet potato
1/2 cup lite coconut milk
1/2 teaspoon cinnamon
Pinch freshly ground nutmeg
1/4 teaspoon grated orange zest
Salt and freshly ground black pepper
1 tablespoon chopped walnuts, optional

  • Preheat the oven to 350 degrees F.
  • Prick the sweet potato all over with a fork, and then wrap in foil. Bake until soft, about 45 minutes. Remove from the oven and let cool.
  • When cool enough to handle, halve the sweet potato and scoop out the flesh. Add the flesh to a food processor, along with the coconut milk, cinnamon, nutmeg and orange zest. Process until smooth. Season with salt and pepper. Fold in the walnuts if using.

6 tablespoons unsalted butter, room temperature
4 large firm but ripe Bartlett pears, peeled, cored, cut into 1/3 inch-thick slices
3/4 cup (or more) pear nectar
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon (generous) ground cardamom

  • Preheat oven to 400°F. Butter 13 x 9 x 2 - inch glass baking dish. Pierce potatoes in several places with fork. Place on baking sheet; bake until very tender when pierced with knife, about 1 hour. Remove from oven. Reduce temperature to 350°F.

3 tablespoons olive oil
1 teaspoon dry mustard
1/2 teaspoon ground ginger
1/4 teaspoon cayenne

2 Bartlett pears, cored, quartered, and halved

Steps:

  • Preheat oven to 400 degrees. Scrub potatoes. Quarter lengthwise; slice diagonally 1 1/2 inches thick. On a rimmed baking sheet, toss slices with olive oil, dry mustard, ground ginger, and cayenne; season with coarse salt. Roast, tossing occasionally, until crisp-tender, 20 to 25 minutes.

1/4 cup bourbon whiskey

4 large sweet potatoes, halved lengthwise, cut into 1/3-inch slices
4 large bartlett pears, crisp, peeled halved, cored & cut into 1/4-inch slices

Steps:

  • Preheat oven to 400 degrees F & butter a 13"x9" glass baking dish.
  • In a small saucepan over medium-low heat, stir butter, cane syrup, pear nectar, vanilla, Bourbon & OJ until butter melts.
