3 tablespoons chopped pistachios
3 tablespoons unsweetened grated coconut
Nonstick cooking spray, for the plate
1/2 cup semisweet chocolate chips
1 teaspoon coconut oil
8 marshmallows
1 1/4 cups white chocolate chips
1/2 teaspoon ground cardamom
3 1/2 cups whole milk
1/2 cup heavy cream
1/2 teaspoon vanilla extract

Steps:

  • Put the pistachios and grated coconut on 2 separate small plates. Lightly spray a large plate with cooking spray.
  • Put the semisweet chocolate chips in a ramekin or very small microwave-safe bowl and microwave, stirring every 30 seconds, until melted. Stir in the coconut oil.
  • Dip a marshmallow halfway in the chocolate, then coat in the pistachios; transfer to the sprayed plate. Repeat with 3 more of the marshmallows. Dip the remaining marshmallows halfway in the chocolate, then coat in the coconut. Refrigerate until ready to serve.

7 ounces white chocolate, chopped into very small pieces
2 egg yolks
2 tablespoons sugar
1/4 cup heavy cream, plus 1 cup
12 fresh blackberries, for garnish
Mint sprigs, for garnish, optional

Steps:

  • In a large glass bowl, place the chopped white chocolate and set aside.
  • Add the egg yolks and sugar to a small bowl and whisk until pale in color.
  • In a saucepan, over low heat, bring 1/4 cup of the cream to a simmer, and slowly add the cream into the yolk and sugar mixture to temper. Pour the creamy mixture back into pan and stir with a wooden spoon until it coats the back of it.

300ml pot double cream
10 cardamom pods , bashed
200g bar white chocolate , broken into chunks

Steps:

  • Bring the cream just to the boil with the cardamom pods, then set aside to infuse for 15 mins.
  • Keep one square of chocolate aside and melt the rest gently in a large bowl over a pan of barely simmering water. Strain in the cream, then beat with an electric whisk for a couple of mins to thicken slightly. Pour into pots, cover and chill for 4 hrs, or up to 2 days, until cold and set. Very finely grate over the reserved square of white chocolate to serve.

I found the recipe from Kraft Foods (www.kraftfoods.com). I do not have an electric mixer and whipped the cream by hand. This is very easy, tasty, and rich for a nice, cool dessert. If you whip the cream by hand, I suggest you do it before you melt the chocolate.

6 ounces baker premium white baking chocolate (other kind of white chocolate also works)

Steps:

  • In a microwavable bowl, melt chocolate and 1/4 cup of the cream.
  • Microwave it at HIGH for two minutes, or until melted.
  • Stir halfway through heating time.
  • Let the melted chocolate be at room temperature or cool for twenty minutes.
