Time 2h15m

Yield 24 cookies

Number Of Ingredients 11

1 1/3 cups all-purpose flour (see Cook's Note)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/4 sticks (10 tablespoons) unsalted butter, at room temperature
2/3 cups packed light brown sugar
1/4 cup granulated sugar
1 large egg
2 teaspoons pure vanilla extract
One 12-ounce bag white chocolate chips
2 teaspoons flaky sea salt

Steps:

  • Sift the flour, baking powder, baking soda and kosher salt into a large bowl.
  • Beat the butter, brown sugar and granulated sugar in a large bowl with a handheld electric mixer on medium-high speed until pale and fluffy, about 4 minutes, scraping down the sides of the bowl as needed. (Alternatively, use a stand mixer fitted with the paddle attachment.)
  • Beat in the egg until combined, then beat in the vanilla. Reduce the mixer speed to low. Add the flour mixture and beat until combined. Fold in the white chocolate chips with a rubber spatula.
  • Press plastic wrap directly onto the surface of the dough and refrigerate for at least 1 hour or preferably overnight.
  • Position racks in the top and bottom thirds of the oven and preheat to 375 degrees F.
  • Use a 1-ounce scoop to scoop the dough onto two ungreased baking sheets about 2 inches apart. Sprinkle the cookie with the flaky sea salt.
  • Bake until the cookies are golden around the edges, but still soft in the middle, 12 to 15 minutes, rotating the pans halfway through from top to bottom and front to back. Let the cookies cool on the baking sheets for 10 minutes, then transfer them to a wire rack to cool completely, about 30 minutes.

WHITE CHOCOLATE CHIP HABANERO COOKIES

White Chocolate Chip Habanero Cookies image

Habaneros lend themselves beautifully to a vast assortment of things sweet, and they're fantastic in these white chocolate chip cookies. I suppose you can make these with regular milk chocolate, semi-sweet or dark chocolate chips, but I opted for the smoother, more mild taste of white chocolate. With these chips, you get the full range of flavors without having anything be overpoweringly sweet. Made the right way, these cookies work perfectly if you're hankerin' a sweet and spicy treat. Take one bite and you'll get the delicious taste of the dough and the white chocolate just melting in your mouth. The fruity flavor of the habanero peppers kick in at ten seconds in, and isn't until 15 to 20 seconds after first taking a bite does the heat fully develop. It's a cool "two stage" snack that goes great with a glass of milk or eggnog.

Tips:

  • Choose the right chocolate chips. Not all chocolate chips are created equal. For this recipe, you'll want to use a high-quality white chocolate chip that is not too sweet. This will help to balance out the heat of the habanero peppers.
  • Don't overmix the dough. Overmixing the dough will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Chill the dough before baking. Chilling the dough will help the cookies to hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies until they are just set. Overbaking the cookies will make them dry and crumbly. Bake the cookies until the edges are golden brown and the centers are still slightly soft.
  • Let the cookies cool completely before serving. This will allow the flavors to develop and the cookies to firm up.

Conclusion:

These white chocolate chip habanero cookies are the perfect combination of sweet, spicy, and chewy. They're sure to be a hit at your next party or gathering. So what are you waiting for? Give them a try today!
