- Cut the crusts off 12 thin slices white sandwich bread. Spread 6 slices with 1/2 pound whitefish salad. Top each with 1 teaspoon chopped pimientos, a few capers and some baby arugula. Spread Dijon mustard on the remaining 6 bread slices and close the sandwiches. Cut into triangles.

- In a small bowl, combine butter, chives, and mustard. Spread bread slices with a layer of seasoned butter. Top 8 bread slices with 2 slices each prosciutto and a layer of sliced cucumber. During Victorian times, children used to take watercress sandwiches to school in place of meat ones. I love them, especially when cut into small trianges and served with a cuppa (cup of tea!).
