Not sure where I got this recipe and not sure of authenticity but it sure sounds good. Don't want to lose it.

1 (3 lb) roasting chickens
salt, for seasoning chicken
pepper, for seasoning chicken
1 tablespoon parsley, finely chopped
1 tablespoon fresh chervil, finely chopped
1/2 medium onion, finely chopped
6 tablespoons butter
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
flour, for dusting

Steps:

  • Heat oven to 425 degrees F.
  • After washing chicken, wipe with paper towels and season the chicken and cavity with salt and pepper.
  • Using a mortar and pestle, pound the parsley, chervil, chopped onion, butter, cumin, cayenne pepper, and 1/2 tsp salt to a paste.
  • Spread the paste carefully over the whole chicken with a spatula.
  • Place a skewer through the wings of the chicken to secure them closely to the sides of the bird during cooking.
  • Lay the chicken, breast side down, in a roasting pan and roast for 20 minutes until lightly browned.
  • Turn the bird over so that the breast is up and roast for another 15-20 minutes.
  • Remove chicken from oven and turn down the heat to 350 degrees F.
  • Meanwhile, lightly dust the chicken breast with flour.
  • Place chicken back in oven.
  • Baste with pan juices and continue to roast for about 1 hour or until the chicken is done, and continue basting frequently during cooking time.
  • When done, the juices will run clear when you push a skewer through the thickest part of the leg.
  • Remove chicken to a cutting board and carve.
  • Serve immediately.

I found a version of this recipe online somewhere and used it to take a roasted chicken to church for a special sampling of foods you can get from ordering foods from Angel Food Ministries. (http://www.angelfoodministries.com/) Everyone raved about it and since I am going to roast one for home today I decided to add the recipe here too. This is a well seasoned bird which is cooked with high heat for the first 20 minutes then cooked the remaining 40-50 minutes at a lower temperature. This makes the chicken nice and moist and very flavorful. It's easy and quick to prepare as well.

1 -3 lb roasting chicken
1 1/2 tablespoons olive oil
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon paprika

Steps:

  • Preheat your oven to 450 degrees before starting to prepare the chicken.
  • Place the whole chicken into a medium sized baking pan.
  • Rub the entire bird with the olive oil.
  • In a small bowl combine the salt, pepper, oregano, basil, and paprika, then sprinkle evenly over chicken.
  • In the preheated oven bake the chicken for 20 minutes.
  • Lower the oven to 400 degrees.
  • Continue baking for 40-50 minutes, or until golden brown and juices run clear.

¼ cup margarine or butter
¼ cup honey
1 teaspoon rose water
1 teaspoon salt
ground black pepper to taste
4 pounds bone-in chicken pieces, with skin
1 pound fresh peaches, pitted and sliced
1 tablespoon white sugar
½ cup toasted slivered almonds

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • In a glass measuring cup, combine the margarine, honey, rose water, salt and pepper. Heat in the microwave until margarine has melted, about 30 seconds. Place chicken in a baking dish and pour the margarine mixture over it. Stir to coat the chicken completely. Place the dish of chicken into the oven.
  • Cook uncovered in the preheated oven until chicken pieces have browned, about 15 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C). Add the peaches to the dish and sprinkle with sugar. Continue to roast until chicken is cooked through, about 20 more minutes.
  • Remove chicken pieces to a serving dish and pour the juices from the pan over them. Garnish with slivered almonds.

2 large chicken breasts, skin on
4 chicken thighs, bone in and skin on
2 tbsp olive oil
200g shallots, peeled
2 garlic cloves, sliced
4cm piece ginger, grated
1 tsp cumin seeds, lightly crushed
1 tsp coriander seeds, lightly crushed
2 small cinnamon sticks
large pinch saffron threads
1 tsp ground ginger
pinch crushed dried chilli
375g peeled butternut squash, cut into chunks
500ml chicken stock
1 rounded tbsp clear honey
2 tbsp roughly chopped coriander

Steps:

  • Heat oven to 180C/160C/gas 4. Cut each chicken breast in half, then season all the chicken. Heat the oil in a mediumsize ovenproof casserole dish. Add the chicken, skin-side down, and brown well all over - you can do it in batches. Remove from the pan and set aside.
  • Lower heat slightly, add the shallots to the pan and cook until golden brown all over. Add the garlic and grated ginger and cook for 30 secs before adding all the spices and cooking for 1 min more.
  • Throw the butternut squash into the pan and stir to coat in the spices. Arrange the chicken, skin side uppermost, on top of the shallots and squash. Pour over the stock and drizzle in the honey. Bring to a gentle simmer, then transfer to the oven to bake for 40 mins until tender. Scatter with the coriander and serve with couscous and a bowl of harissa, if you like.

2 tablespoons coriander seeds
1 tablespoon cumin seeds
1 tablespoon caraway seeds
2 tablespoons minced garlic

4 large chicken breast halves with skin and bone (about 3/4 pound each)
