400g spaghetti
2 long red chillies
100ml extra-virgin olive oil , plus extra
200g bag frozen, shelled cooked prawn , defrosted
2x50g bags wild rocket

Steps:

  • Cook the spaghetti in boiling salted water according to pack instructions.
  • While the spaghetti is cooking, split the chillies down the centre lengthways. Using a teaspoon and starting at the top, scoop the seeds from the flesh - add these if you like your food hot. Using a sharp knife, cut the chillies in thin strips, bundle them together and cut across to make squares.
  • Drain the spaghetti, toss with a drizzling of olive oil and set aside. Heat the oil in a deep frying pan or sauté pan over a high heat and add the prawns. Stir in the chillies, season, then add the spaghetti. Remove from the heat, fold through the rocket and stir.

1 pound 1-ounce (500 grams) dried spaghetti, the best you can get
Olive oil
1 clove garlic, peeled and finely sliced
1 dried red chilli, finely chopped
1 can anchovies
2 handfuls wild rocket (arugula), plus an extra handful to serve
1 lemon, zested and 1/2 lemon, zested
Sea salt and freshly ground black pepper
Parmesan, finely grated

Steps:

  • Cook the spaghetti in boiling salted water according to the packet instructions.
  • Prepare the sauce by gently heating a little olive oil then add the garlic, chilli, and anchovies. Add the wild rocket, toss and add the lemon zest. Remove from the heat and add the lemon juice.
  • Drain the spaghetti then toss it with the sauce, taste and season if needed. Place on a plate and pile the extra handful of wild rocket on top with a good sprinkling of grated Parmesan.

I adapted this recipe from a non veggie friendly Jamie Oliver recipe which had parmesan and anchovies in it. I love this as its got a really perky flavour and its quick to make!

2 tablespoons extra virgin olive oil
1 small garlic clove, peeled and finely sliced
1/4 teaspoon chili flakes
1 tablespoon capers
100 g rocket
1/2 lemon
35 g spaghetti
salt and pepper

Steps:

  • Heat a wide saucepan or frying pan over a medium heat and add half the extra virgin olive oil.
  • Add the garlic, chilli and capers and fry gently for a minute or so. Add 2 handfuls of the rocket, the lemon zest and a good squeeze from half the lemon (you dont need all of it)and add half of the nutrional yeast, then remove from the heat. The rocket will wilt from the heat - mix it well with the garlic, chilli and capers.
  • Meanwhile, cook the spaghetti in plenty of salted boiling water, according to the packet instructions, and drain.
  • Toss together with the rocket and chilli sauce.
  • Season well with salt and pepper and serve with some of the reserved fresh rocket with more nutritional yeast and olive oil on top.
