This is the recipe my father, Willie, passed down to me. Beginning around age 4 our outings together always included a trip to the Spice House to get all the fixings for the next project. 40 years later I now have the privilege of working in the Milwaukee store.

2 tablespoons canola, olive or vegetable oil
1 large onion, diced
1 green bell pepper, diced
3 stalks celery, diced
2 jalapenos, minced
6-8 cloves garlic, crushed
3 pounds ground beef
1/2 pound ground pork sausage
1/2 cup chile con carne seasoning
1/2 cup medium hot chili powder
1/4 cup ground cumin
2 tablespoons New Mexican chili powder
2 tablespoons Aleppo chili flakes
2-3 whole Tien-Tsin chilis
1 whole guajillo chili
2 whole bay leaves
2 15 ounce cans diced tomatoes
4 cups beef broth, divided
4 cups V-8 juice, divided
1 12 ounce can black beans, drained and rinsed
to taste salt
4-6 tablespoons cornmeal

Steps:

  • In a heavy bottomed soup pot (Dutch oven works well), heat the oil. Add all the cut vegetables and saute until the onions are translucent. Add the ground beef and sausage, mixing often to break up the larger chunks. Once the meat is fully cooked, drain off the excess fat. Add all the spices and chilis, and stir until evenly distributed. Leave the whole chilies whole, if the chili seems to be getting too hot, just take them out. Stir in the tomatoes and bring to a simmer. Stir in 2 cups of beef broth and let simmer until reduced by half, stirring often. Do the same with the V-8 juice. Repeat. This process can take up to four hours. Check the seasoning and add salt if necessary. Mix in the cornmeal, constantly stirring until chili is the desired thickness. Add the beans and let simmer a few minutes more. Serve with any sides: crackers, cheese, sour cream, onions, noodles....

2 tablespoons olive oil
2 pounds ground beef
2 stalks celery, chopped
1 onion, chopped
1 green bell pepper, chopped
3 (14 ounce) cans stewed tomatoes
1 (10 ounce) can diced tomatoes with green chiles (such as RO*TEL)
1 (14 ounce) can tomato sauce
1 cup water
2 (1.25 ounce) packages chili seasoning (such as McCormick® Mild Chili Seasoning Mix)
1 (14 ounce) can kidney beans, undrained
1 (14 ounce) can pinto beans, undrained
salt and ground black pepper to taste
1 tablespoon white vinegar, or more to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat. Press ground beef into the hot oil to form one large patty; let the bottom brown, 8 to 10 minutes. Stir and break the ground beef into crumbles and cook until no longer pink, about 5 more minutes.
  • Stir celery, onion, and green bell pepper into ground beef and cook until onion is translucent, about 5 minutes; pour in stewed tomatoes, diced tomatoes with green chiles, tomato sauce, and water. Break apart large chunks of stewed tomatoes. Stir in chili seasoning.
  • Mix kidney beans and pinto beans into chili, season with salt and black pepper, and bring to a boil. Reduce heat to low and simmer for 1 hour. Mix vinegar into chili.

6 dried New Mexico chiles
6 dried pasilla chiles
1 cup water
1 tablespoon oregano leaves
6 pounds chuck, cubed or coarse ground
2 to 3 tablespoons vegetable oil
4 medium onions, finely diced
Black pepper
1 (15-ounce) can tomato sauce
4 cups beef broth
2 tablespoons vinegar
1 teaspoon hot red pepper sauce
16 tablespoons Texas chili powder
2 tablespoons ground cumin
1 teaspoon cayenne pepper
1 tablespoon monosodium glutamate
1 teaspoon sugar
14 garlic cloves, crushed- use remaining pulp

Steps:

  • Remove stems and seeds from pepper pods and boil chile peppers in water for approximately 1 hour, until pulp separates from skin. Scrape pulp from skin, mash into a paste. Use 1 cup of this paste in recipe.
  • Place 1 cup of water in a small saucepan and add the oregano. Bring to a boil, remove from the heat and steep like tea. Strain, and add the strained liquid to the chili pot.
  • In a saute pan, brown the beef, a small batch at a time, in hot oil adding onions and black pepper to each batch. Remove meat to chili pot as it browns. Add remaining ingredients and blend well. Cover and simmer 2 hours, stirring occasionally.

6 onions, chopped
9 pounds beef tri-tip sirloin, cut into 3/4-inch pieces
2 (14.5 ounce) cans diced tomatoes
2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
6 tablespoons paprika
3 tablespoons chili powder
3 tablespoons sugar
3 tablespoons seasoned salt
1 tablespoon garlic powder
1 tablespoon cumin
1 tablespoon dried marjoram
1 tablespoon cayenne pepper
½ cup cornmeal, or as needed

Steps:

  • Soak onions in water in a large bowl until the water takes on some of the onion flavor, at least 1 hour.
  • Heat a large pot over medium-high heat. Cook and stir beef in the hot skillet until browned completely, about 10 minutes.
  • Stir onion-and-water mixture, diced tomatoes, and diced tomatoes with green chile peppers with the beef in the pot; bring to a boil, reduce heat to medium-low, and simmer for about 90 minutes.

1 clove Garlic (crushed)
2 1/2 cups Water
1 16 oz can Pinto Beans (optional)
1 small Green Pepper
2 dried Red Chili Peppers (crushed)
2 Jalapeno Peppers (chopped)
1 1/4 Tblsp. Chili Powder (could add more)
1 12 oz can Tomatoe Paste
2 med. Onions (chopped)
1/2 tsp Salt
1/4 tsp Oregano
1 can Beef Broth (10 oz)
1/2 can Beer (drink the other 1/2)
Serving Condiments/dishes:
Sour cream
Lime
Onions
Cheddar Cheese
Hard Crusted Bread
Salad

Steps:

  • Cook bacon til crispy--drain (keeping the drippings) and crumple. Brown sausage, beef, onions, green pepper, garlic in the drippings. To the beef mix, add bacon, chili pepper, Jalapenos, chili power, salt and oregano. Stir in water, tomatoe paste, beef broth, beer and beans. Bring to a boil, then simmer covered for 1 1/2 hour. Refrigerate overnight. SImmer oncovered 1/2 hour and serve with condiments. The sour cream and lime add a distinctive flavor. Buon Appetito!

1 lb white beans, rinsed
6 cups chicken broth
1 teaspoon chicken base
2 onions, chopped
1 tablespoon oil
6 -8 cloves garlic, minced
7 ounces diced green chilies
4 teaspoons ground cumin
2 teaspoons dried oregano leaves
2 teaspoons cayenne pepper
3 tablespoons chopped cilantro
4 cups diced cooked chicken
1 cup sour cream
3 cups shredded monterey jack cheese
sour cream, to serve
chopped green onion, to serve
chopped cilantro, to serve
chopped tomato, to serve

Steps:

  • Put the chicken stock base, broth, and beans in a large pot (I like my Crock Pot).
  • Simmer it for two hours, covered.
  • Saute the onions in the oil until they are gently browned.
  • Combine the onions with the spices, chicken, and other vegetables, and simmer for another hour or so.
  • Add the cheese and sour cream, cooking until the cheese melts in the chili.
  • You might want to serve the chili with more sour cream, green onions, diced tomatoes, salsa, cilantro, or cheese.
  • The recipe serves about four people, but I always double it, because it tastes even better the second day.
  • If you don't use fresh cilantro, you might want to double the amount you use.
  • Also, I have found the garlic to be low, but you can tell by my name that I love to cook with garlic.
  • It was also great to substitute some of the chicken broth with beer (preferably Mexican), if you add a few shots of tequila for added ummph!
