6 tablespoons olive oil
1/3 cup Sherry wine vinegar
1 tablespoon Dijon mustard
1 teaspoon salt
1 3/4 pounds boneless chicken breast halves with skin, each quartered
1/4 cup dry vermouth or dry white wine
2 tablespoons unsalted butter, chilled, diced

  • Whisk first 5 ingredients in large bowl. Add chicken; turn to coat.

1/2 bunch cilantro, plus more for garnish

1 whole (3- to 4-pound) chicken, cut into 8 pieces
Coarse salt and freshly ground pepper
3 tablespoons finely chopped shallots
2 tablespoons very finely chopped garlic
1/2 cup dry white wine
1 1/2 cups homemade or store-bought low-sodium chicken stock or broth
2 tablespoons chopped fresh chives
