Wine is a wonderful way to complement the sweet and tart flavors of strawberries. The robustness of red wine or the sweetness of white wine can bring out a delightful depth of flavors in the fruit. When wine is reduced in a saucepan, it creates a thick and flavorful syrup that can be drizzled over the roasted strawberries, adding a touch of elegance and sophistication to this simple dessert. This easy recipe is a great way to enjoy a sweet treat while also indulging in a glass of your favorite wine.

STRAWBERRIES AND WINE
Wonderful dessert that is light and refreshing. The strawberries marinate in the wine for hours producing a strawberry flavor wine at the bottom of the bowl that everyone will be fighting for. Adjust the amount of sugar depending on the sweetness of the berries you have. Great way to dress up not-too-sweet strawberries! Champagne may be substituted for the wine.

STRAWBERRIES IN RED WINE
This is a very simple, but quite wonderful dessert, best made with sweet, ripe, fragrant berries, which complements the tannins of red wine. Let the strawberries macerate in wine for up to 1 hour, but no more or they'll be unpleasantly soggy. (It's fine to prepare and sugar them in advance.)

EMBER-ROASTED STRAWBERRIES

Steps:
- Build a campfire, or light a charcoal grill (use hardwood lump charcoal if using a grill). Let the wood or coals die down from glowing red to dusty and ashy, but still hot. You should be able to hold your hand about 6 inches from the coals for 5 to 10 seconds.
- Create a double-layered foil packet large enough to hold the strawberries. Toss the strawberries together with the balsamic vinegar, vanilla extract, and brown sugar to coat. Tightly wrap the strawberries in the packet, crimping the foil well to keep the juices from spilling.
- Place the foil packet directly on the embers, or a standing grill grate over the coals. Cook for about 15 minutes, turning the packet with a long set of tongs every 3-5 minutes. Check the strawberries after 15 minutes-they should be softened and swimming in syrup. Serve as is, or over ice cream, slices of pound cake, or drizzled with heavy cream.
