BAR-B-Q BAKED BEANS
I have been serving this recipe to my extended family every Christmas, Thanksgiving and Easter for over 20 years. It is always a big hit but I have never told the children that there are lima beans in it! This is especially good with a baked ham or spareribs, and is easily doubled. Enjoy!

BIG BOB GIBSON'S BAR-B-Q BAKED BEANS
No barbecue is complete without the classic side dish of baked beans. Although they are almost synonymous with Southern barbecue, baked beans actually originated in New England as a traditional Sunday dish prepared with molasses and spices. Big Bob Gibson Bar-B-Q, an Alabama restaurant, has been serving this classic comfort food since 1925.

DINOSAUR BBQ STYLE BAKED BEANS
I have always disliked baked beans, but I was served and couldn't stop eating these. A few years later I found out it was a recipe from Dinosaur Barbecue, a famous restaurant based in Rochester, NY. I searched the internet for a version of the recipe not using Dinosaur BBQ's "Mutha Sauce," and doubled the amount of Italian sausage to make them really meaty. I cooked this in a cast-iron dutch oven and brought it camping the next day. It was amazing reheated and great with potatoes baked in the fire. It's almost like chili and very filling. NOTE: I'm not sure about the serving amount. This really makes plenty, and everyone ate several big helpings.

Steps:
- Heat olive oil to medium-high in a large saucepan, and cook onion and pepper until soft, adding salt and pepper.
- When softened, add garlic and cook another minute.
- Add sausage, crumbling it into small pieces while it cooks.
- Drain some of the liquid from the beans- make it about the same level in the can as the beans themselves. Mix into the sausage/veggies.
- Turn the heat down to medium-low and add remaining ingredients. Cook for 5-7 minutes.
- Serve immediately, or let cool and reheat. We loved this the next day, as the flavors had a chance to really mix.
Tips:
- Use canned pork and beans for a quick and easy meal.
- If you have more time, you can cook dried beans from scratch. Just be sure to soak them overnight before cooking.
- Add some vegetables to your baked beans for a healthier meal. Chopped onion, bell pepper, and corn are all great additions.
- Use different types of beans for a more flavorful dish. Black beans, kidney beans, and pinto beans are all good choices.
- Don't be afraid to experiment with different spices and seasonings. Chili powder, cumin, and smoked paprika are all great additions to baked beans.
- Serve baked beans with a side of cornbread or mashed potatoes.
