"Wrinkled potatoes" is a recipe typical from the Canary Islands. To make this recipe they use one kind of potatoes typical of the islands. It is a small, dark, soft and tasty potato. In here in the UK, I could not find it so I used the variety "new potatoes" and they are good. I tried this recipe in the islands and honestly, it is really tasty.

650 g New Potatoes
160 g Salt (one-third of potatoes)
1 Lemon slice
Water

Steps:

  • Put 1L of water to boil in a big pot and add the salt (Tip 1-2). Squeeze the slice of lemon and throw it into the pot too.
  • Meanwhile the water gets boiling, wash the potatoes and remove all the dirt from outside.
  • When the water starts to boil, add the potatoes and stir them once (Tip 3). Keep them boiling until they are ready to go. In my case, it was 15 minutes, but it depends on how many potatoes you have in the pot and how big is your stove. The best way to know if the potatoes are boiled is using a fork and check if the potatoes are soft.
  • Once they are boiled you can dispose of the water. Put the pot back to the fire, add a good handful of salt and put the potatoes inside.
  • Now you need to cook the potatoes just with the salt and at high fire for 5-6 minutes to eliminate all the water and the humidity in the skin of the potatoes. Keep shaking the pot during all the time and they will not stick to the bottom.
  • Once the time passes, put the potatoes in a dish to cool down.
  • When they are cold, serve them with red and green mojo sauce.

2 pounds baby potatoes
1 cup salt, plus more as needed
Mojo rojo or mojo verde, for dipping

Steps:

  • Place the potatoes in a deep, medium-size pot. Add enough water to cover, and salt. Potatoes should float in the salted water; if not, add more salt.
  • Place pot over high heat and bring to a boil. Immediately reduce heat to a simmer and cook until potatoes are easily pierced with the tip of paring knife, 25 to 30 minutes.
  • Drain water from pot, leaving just enough to cover the bottom. Return pot to low heat and cook, shaking pot until the salt covering the potatoes begins to crystallize, about 5 minutes. Remove from heat and cover pot with a clean kitchen towel until potato skins have wrinkled, about 10 minutes. Serve immediately with dipping sauces, as desired.

They use a small potao with a light brown skin, but unless you have access to a specially market, use golf-ball size red or white new potatoes. Large grained sea salt is the secret.
