Sarah's Mexican Lasagna image

Sarah says Lane and Breya LOVE this recipe, now that she shared it with me, I can see why!

Number Of Ingredients 12

2 lb hamburger
1 c taco sauce
1 pkg taco seasoning
6 6" flour tortillas
1 can(s) pinto beans, rinsed
1-2 c shredded mexican 4 cheese
1-2 can(s) corn, drained, to taste
sour cream
salsa
cheese
1-2 small onions, chopped (add to hamburger in casserole)
MEGAN ADDS 1 CAN ROTEL

Steps:

  • 1. Oven to 400 degrees. Brown hamburger, drain. Stir in taco sauce, and seasoning. Simmer 10 min on low. Spread 1/2 cup mixture in bottom of 9x13 sprayed with PAM. Put in corn and beef. Top with 2 tortillas, then repeat layers. Put cheese on top. Cover with foil for all but last 5 min of baking.Bake until bubbly, about 35-40 min. Let sit 10 min before serving. Serve with salsa, sour cream, more cheese. You can also have lettuce, tomatoes, onions if desired.
  • 2. Made 4-6-20: 2 lb hamburger, 10 pk tortillas (only used 6), 8 oz jar mild taco sauce, 1 can rotel mild. 1 can pinto beans (added into meat), 1 pk taco seasoning, 1 can corn, 2 c shredded Mexican cheese. Meat on bottom, 2 tortillas, 1/2 can corn and more meat, 2 tortillas, rest corn and meat, 2 tortillas, all cheese.
  • 3. Note 11.24.20...added cheese before top layer, cheese on top, and some corn over cheese so that it doesn't stick to foil. Perfect

I tried this recipe and it was a disaster! The lasagna was dry and the cheese was rubbery. I won't be making this again.
