As made by one of my housemates. The original recipe apparently calls for a two or three spring onions (scallions??), but leeks are cheaper here in the UK. This also works well with turkey, according to another housemate!

1 chicken breast
2 stalks celery
1 inch leek
soy sauce, to taste
salt, to taste

4 tablespoons butter
4 large leeks, white parts only, chopped
4 celery stalks, chopped
4 to 6 cups chicken broth
2 whole chicken breasts on bone with skin on
Bouquet garni: 1/2 teaspoon dried thyme and bay leaf, a few parsley sprigs tied in cheesecloth
Salt and freshly ground white pepper
Juice of 1 lemon
3 egg yolks
1/2 cup heavy cream
1/3 cup minced fresh parsley

Steps:

  • Heat the butter in a saucepan. When foaming subsides, but before it gets brown add the leeks and celery and 1/4 cup of the chicken broth. Cover and simmer over low heat for 5 minutes; do not let it get brown. Add the chicken, skin side up along with bouquet garni and enough of the broth to just cover the chicken. Cover and simmer, over very low heat for 30 minutes or until chicken is just cooked through. Remove chicken from the broth; remove and discard skin and bones and cut chicken into chunks. Remove and discard bouquet garni.
  • Puree the liquid through a food mill and return it to the saucepan. Add remaining broth and boil it down until reduced to 4 cups. Season to taste with salt and pepper. Add lemon juice to chicken and set in microwavable dish.
  • Blend egg yolks and cream together. Very slowly ladle 1 cup of hot broth into the mixture. Return this tempered mixture to the soup and bring to under a simmer to thicken. Reheat chicken for a minute in microwave oven and distribute it among 4 soup plates. Ladle thickened broth over chicken and garnish with parsley. Serve over boiled potatoes or with bread

1 tablespoon butter
4 large leeks, white parts only, chopped
4 celery stalks, chopped
6 cups chicken broth
1/3 cup long grain rice or 1/2 cup medium or short grain rice
Bouquet garni: 1/2 teaspoon dried thyme and bay leaf, a few parsley sprigs wrapped in cheesecloth
Juice of 1 lemon
Salt and freshly ground white pepper
2 whole skinless, boneless chicken breasts, cut into 1/2inch cubes
1/3 cup minced fresh parsley

Steps:

  • Heat the butter in a saucepan. Add the leeks and celery and toss together for a few seconds. Add 1/2 cup of the chicken broth. I combined portions of a couple different recipes and added my own twist according to what i had in my cabinets. chicken is tender, flavors were great, and there's plenty of sauce. i made rice to go with this, which works well as a side or put the chicken and sauce right on top. carrots are what i had in my refridgerator, but many other veggies would work well. i used 6 pieces of chicken, not thin. my broth was not low sodium. i had cream cheese on hand, and i used cayenne pepper. the cream mixture is thick and i spread it on top with a spatula. during cooking liquid built up and it made for a great creamy sauce. i found that each flavor in this recipe was detectable without one overpowering the other. i hope this works as well for you as it did for me!

1 whole chicken (about 4 pounds), cut into 8 pieces (each breast half cut in half crosswise), rinsed well and patted dry
Coarse salt and freshly ground pepper
1 tablespoon unsalted butter
2 teaspoons olive oil
4 small leeks (about 1 pound), white and pale-green parts only, cut crosswise into 3-inch pieces, rinsed well
1 cup good-quality hard apple cider
1 tablespoon coarsely chopped fresh thyme leaves
1/2 cup Crème Fraîche (recipe follows; or use store-bought)
1 tablespoon finely chopped fresh flat-leaf parsley
Crème Fraîche
2 cups heavy cream
2 tablespoons low-fat buttermilk
(makes about 2 cups)

Steps:

  • Season chicken with salt and pepper. Melt butter with the oil in a large enameled cast-iron Dutch oven over medium-high heat until just bubbling.   • Using a slotted spoon, transfer all of the chicken to a warm serving platter. Remove leeks from pot, and arrange the leeks around chicken. Cover with foil, and set aside. Return pot to medium heat. Cook, uncovered, until liquid has reduced by about half (to a scant 2/3 cup), 8 to 10 minutes. Reduce heat to medium-low. Whisk in the crème fraîche and parsley. Ladle pan sauce over chicken and leeks. Serve immediately.
