1 cup sour cream or 1 cup half-and-half
4 garlic cloves, pressed

4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups chicken stock or 2 cups milk
1 pinch freshly grated nutmeg
salt
fresh ground black pepper
1 leek, white and green parts, thinly sliced
3 carrots, diced (or cut into rounds)
2 celery ribs, sliced
2 cups chicken or 2 cups turkey, cubed
1 cup frozen peas (or fresh)
1 tablespoon coarsely chopped fresh tarragon
1 tablespoon coarsely chopped fresh parsley

Steps:

  • The crust: add potatoes to the slow cooker and cover with cold water.
  • Cover and cook on LOW for about 4 hours, until the potatoes are tender when pierced with a fork.
  • Drain off water and increase heat to high; cook for about 30 minutes, until dry.
  • Add the sour cream, garlic, salt, and pepper; using a potato masher, mash the potatoes to your desired consistency; transfer potatoes out of slow cooker and refrigerate (clean slow cooker for use with the filling).
  • The filling: place a large saucepan over high heat and add 3 tablespoons butter.
  • Add in the flour and cook, while stirring constantly, for about 5 minutes, until lightly browned.
  • Add in the stock; continue cooking/stirring for 15 minutes, until the mixture thickens enough to coat the back of a spoon.
  • Add in nutmeg and salt/pepper.
  • Place a saute pan over med-high heat; add in remaining 1 tablespoon butter.
  • Add in leeks, carrots, and celery; saute for about 10 minutes, just until soft.
  • Transfer to the slow cooker and add the chicken and sauce; gently fold in the peas and fresh tarragon.
  • Cover and cook on LOW for about 4 hours, until the vegetables are tender and the chicken is cooked through.
  • Spoon the potato crust over the top of the filling; cook for about 1 hour, until the potatoes brown at the edges.
  • Garnish with parsley and serve piping hot.

1/4 teaspoon salt
5 ounces lard
1/2 cup ice water
3 chicken legs (1 pound, 6 ounces)
Salt and freshly ground pepper to taste
2 tablespoons unsalted butter
1/2 cup diced carrots
1 packed cup diced leeks, white part only
1 1/2 cups diced wild or cultivated mushrooms
1 heaping teaspoon chopped fresh thyme
2 tablespoons flour
3/4 cup plus 2 tablespoons milk
3/4 cup shelled fresh peas
1 egg

Steps:

  • To make the pastry: Combine the flour, salt and lard in a mixing bowl. Using two knives or a pastry blender, cut the flour and lard together, reducing the lard to pieces about the size of large peas. Add the ice water, mix together and gather the mass into a ball. The mixture should be quite moist and pliable, but not sticky. If sticky, knead in a little more flour. Cover the pastry in plastic wrap and refrigerate for at least an hour, or until firm.
  • Divide the pastry in half and roll each piece out on a floured board to about 1/8-inch thickness and about 12 inches in diameter. Fit one into a 9-inch shallow Pyrex pie dish, trimming the excess. Reserve the other pastry circle for the top. Refrigerate until ready to use.
  • Preheat the oven to 375 degrees.
  • Season the chicken legs with salt and pepper and place them, skin side up, in a small roasting pan. Bake for 35 minutes on the top rack of the oven. Remove from the oven and cool. Remove any fat from the pan and de glaze the cooking juices with 1/4 cup of water. Set aside.
  • Remove all the meat from the legs and discard the skin and bones. Dice the meat and set aside (you should have about 2 heaping cups). Melt the butter in a skillet. Add the carrots, leeks, mushrooms, 1/2 cup water, thyme and a pinch of salt. Bring to a boil, reduce to a simmer, cover and let the vegetables sweat for 5 minutes. Stir in the flour and cook for 3 minutes. Then stir in 3/4 cup of milk and the deglazed cooking juices. Raise the heat and allow the mixture to thicken, stirring constantly. Reduce the heat and simmer another 3 minutes.
  • Remove the pan from the heat and stir in the chicken and the peas, adjusting the seasonings. Pour the mixture into the pastry shell. Cover with the remaining circle of dough, trim off the excess and press the edges gently with the tines of a fork to seal. Combine the egg with the remaining milk and brush over the entire surface of the pie. Cut a small hole in the center of the dough and bake for 50 minutes or until brown on top. Remove from the oven and cool for 10 minutes before serving.

Steps:

  • In a large saucepan, melt 2 tablespoons of the butter over medium heat. When the butter is hot, add the garlic and saute for 1 minute or until it is golden. ⅓ cup butter
1 clove garlic, minced

2 tablespoons butter, unsalted
2 tablespoons nonfat plain yogurt
3/4 cup low-fat milk
1 teaspoon olive oil
1 large onion, peeled and finely chopped
2 cloves garlic, peeled and minced
3/4 cup dry white wine
1 1/4 cups chicken broth
2 1/2 pounds chicken legs, skinned, boned and cut in 2- to 3-inch pieces (ask the butcher to do this)
4 medium carrots, cut into 1/2-inch thick slices
1/2 pound fresh morel mushrooms, cleaned and quartered
4 medium parsnips, peeled and cut into 1/2-inch thick slices

1 1/4 lbs boneless chicken breasts
4 cups chicken broth
12 white pearl onions
1 1/2 cups potatoes, diced
1 cup celery, diced
1 cup frozen peas
1 cup diced carrot
1 tablespoon butter
5 tablespoons flour
1/2 cup light cream
1 dash cracked pepper
1/2 teaspoon tarragon
1/2 teaspoon salt
1 premade pie crust

Steps:

  • Boil chicken for 20-25 minutes until cooked through. Let cool. cut into chunks and set aside.
  • Preheat oven to 400°F.
  • Pour broth into a large stock pot and bring to simmer. Add spices (tarragon, pepper, salt).

I love chicken pot pie, but was always scared it wouldn't turn out right. So one day I decided to just wing it and see what happened. Well, the result was a delicious and easy pot pie that's perfect on a weeknight.

1 ½ pounds skinless, boneless chicken breasts
3 tablespoons butter
3 tablespoons all-purpose flour
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup chicken broth
1 (16 ounce) package frozen mixed vegetables
1 ½ cups frozen diced potatoes
1 teaspoon salt
½ teaspoon ground black pepper
2 (9 inch) frozen pie crusts, thawed
