Time 20h50m

Yield 12

Number Of Ingredients 5

3 ½ cups white bread flour
½ cup sprouted spelt flour
¼ teaspoon active dry yeast
2 cups cold water
1 ½ teaspoons fine kosher salt

Steps:

  • Place white bread flour, whole wheat bread flour, and yeast into a large mixing bowl and stir with a wooden spoon. Pour in cold water and mix with a wooden spoon or spatula until a very wet, sticky dough comes together, about 3 minutes. Add the salt and mix another 2 to 3 minutes. Scrape down the sides of the bowl. Cover with foil. Allow dough to rise at room temperature for 18 hours.
  • Deflate the bubbly dough with a spatula by scraping down the sides of the bowl and folding the dough over itself, turning the bowl as you go around in a circular motion, about 12 times or so.
  • Scrape the dough onto a very well-floured surface with a spatula. Sprinkle the surface of dough generously with flour. Generously flour hands and then roll and fold dough on the table until you've formed a round or oval loaf shape that has a smooth surface, 1 to 2 minutes. The dough is very sticky, so add more flour if you need. The shape doesn't really matter, but a smooth surface is the goal.
  • Transfer to a Silpat®-lined baking sheet and let rise, uncovered, until doubled in size, about 2 hours. The dough will spread out more than rise up, but this is normal.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Make 1 shallow slash down the middle of the dough with a very sharp knife or razor, being careful not to deflate the dough too much; the slash is optional. Spray the surface of the loaf very lightly with plain water to help the crust form.
  • Bake in the center of the preheated oven until nicely browned, about 30 minutes. Let cool on a rack before cutting.

HOT WATER CORNMEAL BREAD

Hot Water Cornmeal Bread image

This is a Monday Baking Day sort of recipe: it makes at least a week's worth of bread and dinner rolls.

Provided by Ruth Uitto

Categories     Bread     Yeast Bread Recipes

Time 2h40m

Yield 72

Number Of Ingredients 10

4 cups boiling water
1 cup cornmeal
⅔ cup molasses
½ teaspoon baking soda
½ cup margarine
2 tablespoons salt
4 cups cold water
¼ cup warm water (110 degrees F/45 degrees C)
1 (.25 ounce) package active dry yeast
20 ½ cups bread flour

Steps:

  • Place boiling water into a large mixing bowl. Stir cornmeal slowly into boiling water to make mush, stirring constantly to eliminate large lumps. Add baking soda to molasses, and beat until light and foamy. Add molasses mixture to cornmeal mixture. Mix in butter or margarine and salt. Stir in cold water to make mixture lukewarm. Dissolve yeast in 1/4 cup warm water, and add to cornmeal mixture. Gradually add flour.
  • Turn dough out onto a lightly floured surface, and knead until smooth. Place in a large greased bowl. Grease the top of the dough. Cover with a damp cloth, and allow to rise until doubled.
  • Punch down dough, and divide into 6 parts. Shape 4 parts into loaves, and place in 9 x 5 inch loaf pans. Use the remaining dough to make into 2 dozen rolls. Allow to rise until doubled.
  • Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes, or until brown.

Tips:

  • Use high-quality ingredients, especially the flour and yeast. Freshly milled flour and active dry yeast will give you the best results.
  • Make sure the water is lukewarm, not hot or cold. Hot water will kill the yeast, and cold water will prevent it from activating.
  • Let the dough rise in a warm place. A warm oven or a sunny spot on the counter are both good options.
  • Don't over-knead the dough. Over-kneading will make the bread tough.
  • Bake the bread in a preheated oven. This will help it to rise evenly.
  • Let the bread cool completely before slicing it. This will help to prevent it from crumbling.

Conclusion:

Yeasted country bread with cornmeal is a delicious and versatile bread that can be enjoyed on its own or used to make sandwiches, toast, or croutons. With a little planning and effort, you can easily make this bread at home. So next time you're looking for a hearty and satisfying bread, give this recipe a try!
