Yield Makes about 2 cups

Number Of Ingredients 3

3 cups whole-milk yogurt
1 cup packed fresh mint leaves
3/4 teaspoon salt

Steps:

  • Drain yogurt in a paper-towel-lined sieve set over a bowl, chilled, 3 hours.
  • Pulse all ingredients in a blender until mint is finely chopped. Transfer to a bowl and chill, covered, at least 3 hours.

Tips:

  • For a tangier raita, use plain yogurt instead of Greek yogurt.
  • To make a vegan raita, use coconut yogurt or soy yogurt instead of dairy yogurt.
  • Add a teaspoon of ground cumin or coriander to the raita for a more flavorful twist.
  • If you don't have any fresh mint, you can use dried mint instead. Just be sure to use half the amount, as dried mint is more concentrated.
  • Raita can be served as a condiment with grilled meats, fish, or vegetables. It can also be used as a dip for samosas, pakoras, or other Indian snacks.
