This quick dairy-free broccoli casserole is a must at every event I host or attend. Based on the Jewish version of a crustless quiche (kugel), it utilizes basic ingredients and easy to put together before popping it into the oven. So easy, I could do it with a new baby in the house.

1 tablespoon vegetable oil
1 onion, sliced
4 eggs
1 cup mayonnaise
3 tablespoons all-purpose flour
salt and pepper to taste
2 (16 ounce) bags frozen chopped broccoli, thawed

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease an 8x8-inch baking dish.
  • Heat the vegetable oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more. Set aside.
  • Beat eggs with mayonnaise, flour, salt, and pepper in a large bowl. Stir in broccoli and onion. Pour into the prepared baking dish.
  • Bake in the preheated oven until broccoli is tender, about 90 minutes.

1 (2-pound) bag frozen chopped broccoli cuts, thawed and drained
1 cup light mayonnaise
4 eggs
1½ teaspoons kosher salt
¼ teaspoon coarse black pepper
1 pinch cayenne pepper

  • 1. Preheat oven to 375° F. 2. Liberally coat a 9-inch round baking dish with non-stick cooking spray. 3. In a large bowl, place broccoli, mayonnaise, eggs, salt, black, and cayenne peppers, and mix well. 4. Pour broccoli mixture into prepared baking dish. 5. I've seen a number of broccoli kugel recipes which are quick and easy, but I always had unsatisfactory results with them (broccoli always came out hard and dry on top). This one takes a bit more prep time, but the results are delicious. It's adapted from a recipe by Giora Shimoni.

2 lbs frozen broccoli
5 large eggs
3/4 cup mayonnaise
1 finely chopped onion
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon baking powder
1/4 cup whole wheat flour
1/2 tablespoon onion soup mix
1/2 tablespoon chicken soup powder

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cook broccoli in a pot of boiling water until soft enough to mash with a fork.
  • Drain, then mash broccoli.
  • Thoroughly mix together broccoli and remaining ingredients in a large bowl. (I've used low fat mayo with mixed results, so usually prefer full fat mayo.).
  • Pour mixture into greased 8 x 8 baking pan. Bake for 40-45 minutes or until knife inserted into the center comes out clean.

2 lbs frozen broccoli
4 large eggs
1 cup mayonnaise
1 large onion, chopped
3 tablespoons all-purpose flour (gluten free)
1 tablespoon garlic powder (or to taste)
1 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
1/2 tablespoon chicken soup powder (optional)
oil (for frying)

Steps:

  • Saute onions in a saucepan in oil on medium/low until translucent.
  • Fully defrost broccoli or cook broccoli in microwave until fully thawed.
  • In a bowl, using a fork or hand blender, mash all the broccoli.
  • Add sauteed onions, eggs, mayo, flour, and seasonings. Stir. Pour into 8 x 8 baking dish.
  • Bake at 375 for one hour or until center is set. Slice and serve.
