2 (10 3/4 ounce) cans condensed cream of celery soup
2 (10 1/2 ounce) cans condensed French onion soup
1 (16 ounce) container sour cream
6 lbs frozen italian-style meatballs
2 (16 ounce) packages uncooked egg noodles
1/2 cup butter

Steps:

  • In a large slow cooker, mix together the cream of celery soup, French onion soup, and sour cream. Stir in the meatballs. Cook on high heat for 3-4 hours.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. In a large bowl, toss the pasta with butter. Serve meatballs and sauce over the cooked pasta.

My hubby grows horseradish and we had a nice crop this year. Made Terrie Hoelscher's (JAP Member) Homemade Horseradish in July. Kept it in my frig and pulled it out and it was still perfect. So decided to make Homemade Horseradish Meatballs which were so yummy!

1 lb lean ground beef
1 lb loose sausage (regular)
1 c panko bread crumbs
1 large egg
3 Tbsp homemade horseradish
olive oil enough to cover bottom of skillet
mushrooms and onions (you decide how much)
2-1/2 Tbsp flour
2 Tbsp hungarian paprika
1 small can of low sodium beef broth
1/2 c sour cream
salt and pepper to taste

Steps:

  • 1. crumble your beef and sausage into a large bowl, add the panko breadcrumbs, egg, horseradish and a little salt and pepper. Form into meatballs. I made about 18 meatballs. The size is up to you.
  • 2. Drizzle enough olive oil to cover the bottom of your skillet and brown the meatballs, both sides, on medium heat. Remove from pan and keep warm.
  • 3. Drain some of the excess oil off but not all as you will be need some to saute your mushrooms and onions. This will take only a few minutes. Next stir in about 2 1/2 tablespoons of flour, 2 tablespoons of paprika, cook for an additional 2 minutes and then add your beef broth and bring to a boil. Season with more pepper and add the meatballs and cook for about 8 minutes or until the broth gets slightly thick remove from heat and mix in the sour cream. Serve over noodles, rice or mashed potatoes.
  • 4. Left camera at home, will post picture tomorrow. :)

I got this recipe from my favorite Betty Crocker cookbook, but it never really the same when I make them, I always add whatever herbs & spice hit me at the time of prep. They were originally served with spaghetti, but I started making them for parties and just putting them in a crockpot to keep warm, pouring "spaghetti" sauce over them. (They are also great for meatball subs... just add provalone)

1 1/2 lbs ground beef
1 medium onion, chopped
3/4 cup dried breadcrumbs
1 tablespoon snipped parsley (or used dried)
1 teaspoon Worcestershire sauce
1 egg
1/2 cup milk
salt and pepper

Steps:

  • Mix all ingredients.
  • shape into rounded balls, size depends on use (spaghetti, subs or appetizers)
  • Cook in a large skillet on medium heat for about 20 minutes, or until completely done.
  • The recipe calls for 1/4 salad oil to cook meatballs in, but depending on the "grade" of ground beef you may or may not need the oil. Also, I usually put a loose fitting lid on the skillet and I turn the meatballs so that they cook evenly.
  • You can also make ahead and freeze -- that's the best part, less to do on "party" day.
