  • Use high-quality chocolate for the best flavor. A semisweet or bittersweet chocolate with a cocoa content of at least 60% is a good choice.
  • For a gooey center, use a combination of milk chocolate and marshmallows. The milk chocolate will melt and create a creamy filling, while the marshmallows will add a chewy texture.
  • If you don't have a graham cracker crust, you can make your own by crushing graham crackers and mixing them with melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  • Be careful not to overbake the cake. It should be cooked through, but still have a slightly gooey center. A toothpick inserted into the center of the cake should come out with just a few moist crumbs attached.
  • Let the cake cool completely before frosting it. This will help the frosting to set properly.
