Time 3h35m

Yield 2 to 4 servings

Number Of Ingredients 23

1 tablespoon ground cumin
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
1 teaspoon paprika
1 teaspoon ground nutmeg
1 teaspoon cayenne
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon ground coriander
1/2 teaspoon black pepper
1/2 teaspoon turmeric
1 1/2 cups plain whole-milk yogurt
3/4 cup fresh mint leaves, finely chopped
1/4 cup extra-virgin olive oil
1 tablespoon kosher salt
1 tablespoon sugar
1 tablespoon harissa
4 cloves garlic, smashed
1 red onion, half finely chopped, half cut into 1- to 2-inch pieces
1 lemon, halved
Freshly ground black pepper
2 pounds boneless, skinless chicken breasts, cut into 1- to 2-inch cubes
1 bell pepper, cut into 1- to 2-inch pieces

Steps:

  • For the ras al hanout: Add the cumin, cardamom, cinnamon, paprika, nutmeg, cayenne, cloves, allspice, coriander, pepper and turmeric to a jar with a lid. Cover and shake to combine. Measure out 1 tablespoon for the chicken and put in a large bowl. Store the remaining spice for up to 3 months in the jar and use as desired.
  • For the chicken: In the bowl with the ras al hanout, add the yogurt, mint, oil, salt, sugar, harissa, garlic, finely chopped onion, juice from half of the lemon and about 12 turns of pepper (about 1/2 teaspoon) and mix to combine. Fold in the chicken to evenly coat, then cover and let marinate in the refrigerator for at least 3 hours and up to overnight.
  • Soak 8 wooden skewers in water for at least 30 minutes.
  • Thread the chicken pieces on the skewers, adding the bell pepper and onion pieces in between the meat.
  • Heat a grill or grill pan over medium-high heat. Cook the skewers, turning them occasionally, until they're deeply browned on all sides and cooked through, about 7 minutes per side. Squeeze with the juice from the remaining lemon half before serving.

Here's what you need: creamy peanut butter, coconut milk, spring onions, garlic, ginger, fresh Serrano chilies, curry powder, cumin, turmeric, salt, soy sauce, lime, boneless, skinless chicken thighs, peanuts, coconut milk, Bamboo or wooden skewer

Provided by Evelyn Liu

Categories     Dinner

Yield 4 servings

Number Of Ingredients 16

¾ cup creamy peanut butter
¾ cup coconut milk
4 spring onions, roughly chopped
3 cloves garlic, peeled
10 g ginger, peeled
2 fresh Serrano chilies, roughly chopped
1 teaspoon curry powder
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon salt
2 tablespoons soy sauce
1 lime, juiced
8 boneless, skinless chicken thighs, diced
⅓ cup peanuts, chopped
½ cup coconut milk
Bamboo or wooden skewer

Steps:

  • In a food processor, blend the peanut butter, coconut milk, spring onions, garlic, ginger, chilies, curry powder, cumin, turmeric, salt, soy sauce, and lime juice into a smooth paste; this should make about 2 cups. Reserve half of the marinade and pour the other half over the chicken thighs. Mix and chill for 2 hours or overnight.
  • Preheat the oven to 425˚F (220˚C). Line a baking tray with parchment paper.
  • Skewer the marinated chicken onto bamboo skewers, then arrange the skewers so their ends rest on the edges of the baking tray, allowing the chicken to be suspended. Bake the chicken skewers for 15-20 minutes, until slightly dark brown on the edges and cooked through.
  • With no oil in the pan, toast the chopped peanuts on low to medium heat, stirring constantly until the peanuts turn golden brown, 2-3 minutes. Add in the reserved marinade and the coconut milk. Stir and cook until thick and very aromatic, 5-10 minutes.
  • Serve the chicken skewers with the sauce on the side.
  • Enjoy!

Here's what you need: full-fat yogurt, garlic, fresh thyme, McCormick® Zesty Spice Blend, lemon zest, lemon juice, olive oil, kosher salt, black pepper, boneless, skinless chicken breast, vegetable oil, full-fat yogurt, McCormick® Zesty Spice Blend, lemon zest, lemon juice, olive oil, fresh basil, kosher salt, freshly ground black pepper

Provided by Tasty

Yield 4 servings

Number Of Ingredients 19

1 cup full-fat yogurt, such as Greek or Icelandic skyr
3 cloves garlic, grated
3 sprigs fresh thyme
1 tablespoon McCormick® Zesty Spice Blend
1 lemon zest
1 lemon juice
3 tablespoons olive oil
1 teaspoon kosher salt, plus more to taste
½ teaspoon black pepper, plus more to taste
2 lb boneless, skinless chicken breast, cut into 1 1/2 in (3 cm) cubes
vegetable oil, for cooking
1 cup full-fat yogurt, such as Greek or Icelandic skyr
1 tablespoon McCormick® Zesty Spice Blend
1 lemon zest
½ lemon juice
2 tablespoons olive oil
2 tablespoons fresh basil, minced
kosher salt, to taste
freshly ground black pepper, to taste

Steps:

  • Make the chicken: In a large bowl, combine the yogurt, garlic, thyme leaves, Zesty spice blend, lemon zest and juice, olive oil, salt, and pepper. Whisk well.
  • Add the cubed chicken to the marinade and stir well to coat. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes and up to 2 hours.
  • While the chicken marinates, make the yogurt dip: In a medium bowl, mix together the yogurt, Zesty spice blend, lemon zest and juice, olive oil, basil, salt, and pepper. Set aside.
  • Once chicken has marinated, thread 2-3 pieces of chicken lengthwise onto a wooden skewer. Leave at least 1 inch (2 ½ cm) of space at the bottom of each skewer so you can maneuver them while cooking. Repeat with the remaining chicken.
  • Heat a grill pan over medium-high heat. Brush a few teaspoons of vegetable oil on the pan. Season the chicken skewers with salt and pepper and add a few at a time to the grill pan, ensuring the skewers are laid perpendicular to the grill lines. Grill until the chicken is cooked through, 2-3 minutes per side. Set the cooked skewers on a plate or tray while you cook the rest.
  • Arrange the skewers on platter and serve with the yogurt dipping sauce.
  • Enjoy!

Grilled Chicken Skewers With Hummus-Yogurt Dipping Sauce image

Now that summer has arrived I figured why not start grilling! So I came up this new dish that is quick and easy, but also healthy and delicious at the same time. The hummus-yogurt dip can also be used as a healthy dip for vegetables too!

Provided by InspirationsFC

Categories     Poultry

Time 45m

Yield 2 skewers each, 4 serving(s)

Number Of Ingredients 14

1 lb boneless skinless chicken breast, cut in strips
extra virgin olive oil
salt and pepper, to taste
1 cup hummus (I used Sabra Luscious Lemon)
1/2 cup Greek yogurt (I used Chobani Non-Fat Plain Greek Yogurt)
1 teaspoon salt
2 cups long-grain white rice
3 tablespoons unsalted butter
1 medium yellow onion, finely chopped
2 medium garlic cloves, finely chopped
2 cups chicken broth
1/4 cup water
1 1/4 teaspoons kosher salt, plus more as needed
1/4 cup finely chopped fresh Italian parsley

Steps:

  • To make the grilled chicken skewers: Soak 8 (or more if needed) thin wooden skewers in water. Moisten the chicken with olive oil and season to taste. Thread the chicken fillets onto the skewers and grill on a hot stovetop cast-iron skillet, turning around to cook all sides.
  • For dipping sauce: mix hummus, yogurt and salt together in bowl.
  • To serve: Arrange the grilled chicken skewers on a platter or over bed of rice, alongside a bowl of the sauce, and lemon wedges on the side (optional).
  • For the rice pilaf:.
  • Place the rice in a fine-mesh strainer and rinse under cold water until the water runs clear; set aside.
  • Melt the butter in a medium saucepan over medium heat. Add the onion and garlic, season with salt, and cook, stirring occasionally, until softened, about 5 minutes.
  • Add the rinsed rice and cook, stirring occasionally, until the kernels crackle, about 2 minutes. Add the broth, water, and measured salt and stir to combine. Increase the heat to high and bring to a boil.
  • Reduce the heat to low, cover with a tight fitting lid, and simmer undisturbed until the rice is tender, about 15 minutes. Remove from the heat and let sit covered to steam, about 5 minutes. Fluff with a fork and stir in the parsley. Taste and season with additional salt as needed.
