Tips:

  • Choose the right chicken: For the most flavorful soup, use a whole chicken or chicken thighs. Bone-in chicken will also add more flavor than boneless, so if you have the time, opt for bone-in.
  • Don't overcrowd the pot: If you're using a whole chicken, cut it into 8-10 pieces. If you're using chicken thighs, add them whole. Overcrowding the pot will prevent the chicken from cooking evenly.
  • Simmer, don't boil: Bring the soup to a boil, then reduce the heat to low and simmer for at least 1 hour. This will allow the flavors to develop and the chicken to become tender.
  • Don't add the noodles too early: Add the noodles during the last 10-15 minutes of cooking. This will prevent them from becoming mushy.
  • Season to taste: Taste the soup before serving and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs.

Conclusion:

Zesty chicken soup is a delicious and comforting meal that's perfect for a cold winter day. It's also a great way to use up leftover chicken. With a few simple ingredients and a little time, you can make a pot of zesty chicken soup that the whole family will love.
