2 whole pork tenderloins , about 1 1/2 pounds (700 grams)
2 garlic cloves, crushed
1 tablespoon (15 milliliters) vegetable oil
5 teaspoons (25 milliliters) chili powder
1 1/2 teaspoons (7.5 milliliters) ground cumin
1/2 teaspoon (2.5 milliliters) onion powder
1/2 teaspoon (2.5 milliliters) salt
1/2 teaspoon (2.5 milliliters) black pepper

Steps:

  • Gather the ingredients.
  • Place tenderloins in a resealable plastic bag.
  • Combine remaining ingredients-crushed garlic cloves, oil, chili powder, cumin, onion powder, salt, and pepper-and pour into bag.

1 cup quinoa, rinsed
1 teaspoon coriander seed
1 teaspoon cumin seed
2 garlic cloves, coarsely chopped
Kosher salt and freshly ground pepper
1 small pork tenderloin, trimmed (about 1 pound)
2 tablespoons extra-virgin olive oil
2 cups baby spinach
1/2 cup loosely packed fresh cilantro leaves, plus more for garnish
Juice of 1 lime
1/2 small jalapeno (seeds removed for less heat)
2 tablespoons Parmesan or Cotija cheese

Steps:

  • Preheat oven to 375 degrees F. Put the quinoa in a medium saucepan filled two-thirds full of water. Bring to a boil, lower the heat and simmer until the grains are tender, about 12 minutes. Drain and rinse the quinoa under cold water. Drain again, then return to the pot.
  • Meanwhile, combine the coriander, cumin and 1 garlic clove, 1/2 teaspoon salt and 1 teaspoon pepper in a mortar and pestle coarsely crush to make a rough paste (alternatively use a small food processor). Rub the pork tenderloin all over with the spice mixture.
  • Heat 1 tablespoon of the oil in a large oven-proof skillet over medium heat until very hot. Add the pork tenderloin and cook, turning occasionally, until browned on all sides, about 6 minutes total. Transfer the skillet to the oven and roast the pork until just cooked through, or until an instant-read thermometer inserted into the thickest part of the pork registers 150 degrees F, about 15 minutes. Let rest for 5 minutes.
  • Combine the spinach, cilantro, lime juice, jalapeno and the remaining 1 tablespoon oil and garlic cloves in a food processor and pulse until finely chopped. Add to the quinoa along with 3/4 teaspoon salt. Cook over medium-low heat, stirring, until warmed through, about 3 minutes. Stir in 1 tablespoon of the Parmesan. Slice the pork tenderloin and divide between 4 plates with the quinoa. Sprinkle with the remaining 1 tablespoon cheese and a few cilantro leaves for garnish.

1/2 cup peach preserves
1/4 cup bottled honey mustard and herb marinade
1 (6 7/8 ounce) box wild mushroom and herb rice pilaf mix
1 lb pork tenderloin
1/2 lb sugar snap pea (strings removed if fresh)

Steps:

  • Heat grill or oven broiler.
  • Heat peach preserves and the honey mustard marinade in a small saucepan over medium-low heat to melt preserves. Set aside.
  • Rub 1 tsp of rice seasoning mix on the tenderloin. Cook rice and remaining seasoning according to directions on package.
  • Grill or broil tenderloin for 20 minutes, turning once, or until it reaches 160 degrees on a meat thermometer.

1 lb. pork tenderloin, cut into 1/4-inch-thick slices
1 cup chopped onions (about 1 medium)
1-1/2 cups diagonally sliced carrots (1/4 inch thick)
1/3 cup pickled jalapeños and carrots, coarsely chopped
3 slices OSCAR MAYER Baked Cooked Ham, chopped

Steps:

  • Heat 1/4 cup of the dressing in large skillet on medium heat. Add half of the pork slices; cook 2 min. on each side or until browned on both sides. Remove from skillet; cover to keep warm. Repeat with remaining pork slices.

This easy recipe is one of my favorite dinners for company. Leaving out the red pepper flakes, makes it a dish for anyone. Presented on a platter over rice, it looks very appealing. It is equally as good made on the grill, or in the oven. It originally came from a syndicated column in our local newspaper. Prep time includes marinading.

1/3 cup soy sauce
1/3 cup hoisin sauce
2 tablespoons vegetable oil
3 tablespoons sugar
3 crushed garlic cloves
1 dash red pepper flakes, to taste
2 (3/4 lb) pork tenderloin, about (not pork loin)
1/2 cup water
1/4 cup butter
6 green onions, green tops included, sliced into rings
hot cooked rice

Steps:

  • In heavy duty freezer Ziploc bag, mix soy sauce, hoisin sauce, oil, garlic, sugar and red pepper flakes.
  • Add tenderloins and stir to coat all over.
  • Seal and refrigerate at least 1 to 3 hours, turning bag over occasionally.
  • Preheat oven to 500°F.
  • Line small roasting pan with foil.
  • Spray a cooling or cooking rack with nonstick spray, and place on top of pan.
  • Place tenderloins on rack.
  • SAVE MARINADE.
  • Place meat in preheated oven.
  • Roast 9 to 10 minutes.
  • Turn and roast 9 to 10 minutes more.
  • Check temperature in thickest part of meat.
  • It should read approx 160°F.
  • Remove from oven, and allow meat to stand 8 minutes.
  • Meanwhile pour marinade from bag into saucepan.
  • Rinse the bag with the 1/2 cup of water.
  • Add to saucepan.
  • Bring to low boil.
  • Boil slowly for 5 to 6 minutes.
  • Right before ready to serve, add butter to sauce; stir.
  • Slice meat into 1/4 inch slices.
  • Place on hot rice.
  • Spoon marinade sauce over meat and rice.
  • Top with green onions.
  • Note: This can be cooked on the grill also.
  • Cook until temperature reaches 150 to 160°F.
  • You can also cook in oven for 6 minutes each side, and then toss on a gas grill for a few minutes for a outdoor flavor.
