2 pounds apples - peeled, cored, and cut into 1-inch chunks
1 cup fresh cranberries
¼ cup white sugar
3 tablespoons water
½ teaspoon ground cinnamon
1 pinch salt
1 ½ teaspoons lemon juice

Steps:

  • Stir apples, cranberries, sugar, water, cinnamon, and salt together in a saucepan. Bring to a boil, reduce heat to low, and cook until apples and cranberries are tender, about 20 minutes. Remove from heat.
  • Stir lemon juice into cranberry mixture.

2 cups cranberry juice
1 (6-ounce) bag sweetened dried cranberries
1 cinnamon stick, broken in half
1 cup sugar
2 Gala apples, peeled, cored and diced
2 teaspoons corn starch

Steps:

  • In a medium saucepan over medium heat, add the cranberry juice, cranberries, cinnamon and sugar. Bring to a boil and let cook for 5 minutes. Add the apples and cook, stirring occasionally, until the cranberries have softened and apples are tender, about 5 minutes.
  • Remove 8 ounces of the liquid to a small bowl and whisk in the cornstarch. Slowly add the cornstarch-juice mixture (slurry) to the cranberry mixture, stirring constantly. Cook for an additional 5 minutes.
  • Remove from heat and pour into a serving bowl. Refrigerate until thickened, about 30 minutes. Remove the cinnamon sticks and serve.

3 pounds apples, peeled, cored, and cut into 1/2-inch-thick slices (try a combination of Gala, Golden Delicious, and McIntosh)
1 cup fresh or frozen cranberries
1 cinnamon stick
1/2 cup sugar
3/4 cup water
2 teaspoons freshly squeezed lemon juice

Steps:

  • In a large saucepan, combine apples, cranberries, cinnamon stick, sugar, and water; bring to a boil. Reduce heat; cover, and simmer, stirring occasionally, until apples are tender, 30 to 35 minutes. (If sauce begins to stick to the bottom of the pan, add 2 to 4 tablespoons more water.)

1 ½ cups whole berry cranberry sauce
1 cup whole wheat pastry flour
1 cup rolled oats
⅔ cup packed brown sugar

½ cup butter, melted

  • Preheat the oven to 350 degrees F (175 degrees C).

1/2 cup brown sugar, packed
1 cup water
12 ounces cranberries (fresh or frozen)
1 -3 tablespoon horseradish
1 tablespoon Dijon mustard
8 ounces cream cheese, softened
assorted cracker

  • In a large saucepan, bring sugars and water to a boil over medium heat.

1 cup fresh cranberries, picked over
1/2 cup sugar
1/4 cup apple juice or water
a 3-inch cinnamon stick
a 3-inch strip of lemon zest removed with a vegetable peeler
2 tablespoons unsalted butter
