Tips:
- Choose the right zucchini: For best results, select firm, small to medium-sized zucchinis with smooth, unblemished skin.
- Roast the zucchini properly: To achieve evenly roasted zucchini, cut them into uniform-sized pieces and toss them with olive oil, salt, and pepper. Roast them at a high temperature (425°F) for 15-20 minutes, or until they are tender and slightly charred.
- Use fresh herbs: Fresh herbs like basil, oregano, and thyme add a burst of flavor to the dish. Chop them finely and stir them into the sauce or sprinkle them over the pasta before serving.
- Don't overcook the pasta: Cook the pasta al dente according to the package instructions. Overcooked pasta will become mushy and lose its texture.
- Garnish with cheese: A sprinkle of freshly grated Parmesan or Pecorino Romano cheese adds a salty, nutty flavor to the dish. You can also add a dollop of ricotta cheese for a creamy touch.
