Time 35m

Yield 6 serving(s)

Number Of Ingredients 10

1 lb lean ground beef or 1 lb ground turkey
2 lbs medium zucchini, approx. 9, cut in 1/4-inch half circles
1 green bell pepper, chopped
1 large white onion, chopped
2 garlic cloves, minced
1 (26 ounce) jar spaghetti sauce, your choice
1 teaspoon garlic powder
1 teaspoon dried sweet basil leaves
1/2 teaspoon ground black pepper
salt

Steps:

  • Brown ground beef with onion and bell pepper in a large skillet or pot with lid. Drain grease.
  • Add garlic and seasonings. Stir.
  • Add zucchini and stir. Cover with lid and cook over medium heat for approximately 15 minutes until the zucchini is crisp tender (I don't add any water, the zucchini has enough). Stir about every 5 minutes.
  • Remove lid and stir in spaghetti sauce. Cook for another 5 minutes.
  • Great served with cottage cheese or topped with parmesan!

Tips:

  • Choose the right zucchini: Look for firm, deep green zucchini with smooth skin. Avoid zucchini that is yellow or has blemishes.
  • Grate the zucchini: Grating the zucchini helps it to cook evenly and quickly. You can use a box grater or a food processor fitted with a grating blade.
  • Brown the ground beef: Browning the ground beef adds flavor and helps to keep it from becoming dry. Cook the ground beef over medium-high heat until it is browned on all sides.
  • Use a large skillet: A large skillet will help to prevent the zucchini and ground beef from overcrowding. This will help them to cook evenly.
  • Season the dish: Be sure to season the dish with salt, pepper, and other spices to taste. You can also add other vegetables, such as chopped onion or bell pepper.
  • Serve immediately: Zucchini and ground beef skillet is best served immediately. It can be served over rice, pasta, or mashed potatoes.

Conclusion:

Zucchini and ground beef skillet is a quick and easy meal that is perfect for a busy weeknight. It is also a healthy and affordable dish that is packed with flavor. With its combination of protein, vegetables, and healthy fats, zucchini and ground beef skillet is a meal that the whole family will enjoy.
