3 cups frozen shredded hash brown potatoes, thawed
1 large egg
1/4 cup chopped onion
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
FILLING:
2-1/2 cups thinly sliced zucchini
1 garlic clove, minced
1 tablespoon olive oil
4 large egg whites
2 large eggs
3/4 cup shredded reduced-fat Swiss cheese
1/2 cup fat-free milk
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine the hash browns, egg, onion, Parmesan and salt. Press onto the bottom and up the sides of a 9-in. pie plate. Bake 400° for 20 minutes., In a large nonstick skillet, saute zucchini and garlic in oil until crisp-tender. Cool for 5 minutes. Spoon into potato crust. Combine the remaining ingredients. Pour over zucchini mixture. Reduce oven temperature to 350°; bake zucchini pie for 25-30 minutes or until a knife inserted in the center comes out clean. Let stand for 5-10 minutes before cutting.

4 medium potatoes, peeled and cut into large chunks
1 medium red bell pepper, seeded and chopped
1 clove garlic, sliced
½ cup dry bread crumbs
¼ cup olive oil
paprika to taste

ground black pepper to taste

  • Preheat oven to 400 degrees F (200 degrees C).

2 tablespoons olive oil
1 large onion, chopped
1/2 cup chopped sweet red pepper (or you can use roasted red bell pepper in a jar)
1/4 teaspoon garlic powder
1 lb zucchini, shredded
1 lb lean ground beef
6 ounces shredded sharp cheddar cheese
2 teaspoons salt
2 teaspoons basil
1/2 teaspoon pepper
4 cups water
1 cup low-fat milk
4 cups instant potato flakes
2 eggs, beaten
2 tablespoons grated parmesan cheese

Steps:

  • Heat oil in large fry pan over medium heat. Saute onion, red pepper, and garlic 3 minutes. Add zucchini and beef, breaking up beef with spoon. Cook stirring often, until meat loses red color (4 minutes). Stir in half the cheddar cheese, 1 t. salt, basil, and pepper. Reserve.
  • Preheat oven to 450. Lightly grease 9 x 13 casserole. Bring water, milk, and 1 t. salt to boil. Stir in potato flakes; then beat in egg and rest of cheese. Remove from heat.
  • Spread half of potato mixture in bottom of casserole. Spoon meat mixture over potatoes; spoon rest of potatoes on top. Sprinkle with parmesan cheese.
  • Bake at 450 for 15 minutes. Broil for 3-5 to brown top; then let sit 5 minutes before cutting. (If made ahead, heat for 30 minutes at 350 or until center is warm. Then heat at 450 for 15 minutes to brown the top.).

1 tomato, diced
2 tablespoons chopped onion

1 cup vegetable broth, or as needed

I found this recipe on Allrecipes.com, and changed it up a bit. I use a whole wheat Zesty breadcrumb my store has, but Italian seasoned are also really good too. Also, I sometimes change up the veggies according to what is seasonal: broccoli, carrots, onions, parsnips, or quartered fresh mushrooms. I love this cause it is really easy to throw together and change with what I have in the fridge. Just remember the cooking times of the veggies - squash and peppers cook faster than potatoes. Either cut the faster cooking veggies larger.....or cut the slower cooking veggies a bit smaller. This way everything can cook together and come out tasty!
