Crispy parmesan garlic chicken with zucchini is a fantastic one-pan meal that the family will love. Crispy chicken is breaded with an amazing parmesan garlic crust paired with tender zucchini sautéed to perfection!

2 Chicken Breasts (sliced in half, or 4 thin chicken breasts)
8 Tablespoons butter (divided)
½ cup Italian Bread Crumbs
½ cup plus 1 Tablespoon grated parmesan (divided)
¼ cup flour
2 medium zucchini (sliced)
2 garlic cloves (minced)

Steps:

  • In a large skillet over medium heat melt 2 Tablespoons butter. To make the chicken: Melt the remaining 4 tablespoons of butter in a shallow dish. In another shallow dish combine bread crumbs, parmesan cheese, and flour. Dip the chicken in the butter and then coat in the bread crumb mixture and place in skillet.
  • Cook on each side for about 3-4 minutes until the outside is crispy and the chicken is cooked throughout. Set aside on plate.
  • Add 2 Tablespoons of butter back to the skillet and saute the minced garlic for a minute. Add the zucchini to the skillet and saute until tender. Salt and pepper to taste and add 1 Tablespoon parmesan. Add the chicken back to the skillet and heat for a minute or so. Serve immediately.

1 lb chicken tenderloins, cut into pieces
1 cup buttermilk
1/2 cup grated zucchini, squeezed dry with a paper towel
2 cups cornflakes, finely crushed
1/4 cup cornmeal
1/4 cup grated parmesan cheese
1 teaspoon paprika
1 teaspoon cayenne pepper
1 teaspoon kosher salt
1 teaspoon pepper

Steps:

  • 1. Heat oven to 475. Line a baking sheet with foil and spray with cooking spray. 2. Add the chicken pieces to a large bowl and pour the buttermilk over top. Mix well and set aside. 3. In a large zip-lock bag, mix together the grated zucchini, crushed cornflakes, cornmeal, Parmesan cheese, paprika, cayenne pepper, salt and pepper. 4. Drop each piece of chicken into the bag and shake until pieces are coated. Place on the prepared baking sheet. Repeat until all the chicken has been coated then pray each nugget with non-stick spray (so they don't burn). 5. Bake for 10-12 minutes, then gently flip using kitchen tongs and spray the other side. Zucchini makes a unique, and more nutritious, coating for these buffalo chicken nuggets.

1 lb boneless skinless chicken, cut into 1/2-inch strips or chunks
1 cup buttermilk
1 cup finely grated zucchini, squeezed dry with paper towel
2 cups Progresso™ plain panko crispy bread crumbs
3/4 cup Original Bisquick™ mix
1/2 cup grated Parmesan cheese
1 teaspoon seasoned salt
1 teaspoon pepper
Cooking spray or olive oil
1 to 2 cups Frank's™ RedHot™ Buffalo Wings Sauce
2 tablespoons butter, melted
Blue cheese or ranch dressing

Steps:

  • Heat oven 475°F. Line rimmed pan with foil, and spray or brush foil with olive oil.
  • In large bowl, mix chicken and buttermilk; set aside.
  • In another large bowl, mix grated zucchini, bread crumbs, Bisquick mix, Parmesan cheese, seasoned salt and pepper.
  • Remove each piece of chicken from buttermilk, and dredge through the crumb mixture, pressing gently to adhere. Place on pan, making sure not to crowd the pan; if necessary, use 2 pans. Spray each chicken strip with cooking spray or a mist of olive oil.
  • Bake 10 to 12 minutes, then gently turn using kitchen tongs, and spray the other sides. Bake 10 to 12 minutes longer or until no longer pink in center.
  • In small bowl, mix Buffalo sauce and melted butter. Dip chicken pieces into mixture, then place back on pan and bake 5 minutes longer. Serve with dressing.
