1 cup vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 ⅓ cups all-purpose flour
¼ teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
2 cups grated zucchini
½ cup margarine
1 (3 ounce) package cream cheese, room temperature
2 ½ cups confectioners' sugar, sifted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, mix together the eggs, oil, sugar and vanilla until well blended. Combine the flour, baking powder, baking soda and salt; stir into the sugar mixture. Mix in the zucchini. Spread the batter evenly into the prepared pan.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

1 cup canola oil
2 cups zucchini, Grated
3 teaspoons vanilla
2 1/2 cups flour
1/4 teaspoon baking powder
1 teaspoon salt
2 teaspoons baking soda
1/2 cup oleo (not spread or tub product) or 1/2 cup butter, room temperature (not spread or tub product)
1 teaspoon vanilla
1 (3 ounce) package cream cheese, room temperature
2 1/2 cups powdered sugar
milk, as needed

Steps:

  • Preheat oven to 350°F and grease/flour a 13x9-inch baking pan.
  • Beat eggs; add sugar and oil.

½ teaspoon ground cinnamon
1 ½ cups butter, at room temperature
¾ cup white sugar
⅔ cup lemon juice

7 cups peeled, seeded, and sliced zucchini

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease sides of a 10x15-inch jelly roll pan.

1 cup shredded zucchini, drained
1/2 cup chopped nuts
3/4 cup powdered sugar
1 tablespoon butter or margarine, softened
1/8 teaspoon ground cloves
3 to 4 teaspoons milk

Steps:
