For the most amazing and moist zucchini bread ever! This is an adapted, from an adapted recipe found in a September 1974 Sunset Magazine issue. The original recipe called for currants, the adapted recipe substituted pineapple, walnuts and raisins for the currants. My recipe dropped the raisins (and currants), changed the amount of nutmeg from 3/4 teaspoon to 1 tablespoon, and added cardamom and Chinese ginger.

3 eggs
1 cup olive oil
2 cups sugar
2 teaspoons vanilla
2 cups coarsely grated zucchini
1 (8 ounce) can crushed pineapple, drained
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1 1/2 teaspoons cinnamon
1 tablespoon fresh grated nutmeg
1/4 teaspoon cardamom
1/4 teaspoon chinese ginger

Steps:

  • Preheat oven to 350°F
  • In a mixer, beat eggs. Aid oil, sugar, and vanilla; continue beating mixture until thick and foamy. With a spoon, stir in zucchini and pineapple.
  • In a separate bowl, combine flour, baking soda, salt, baking powder, cinnamon, nutmeg, cardamom, and ginger. A third at a time, add dry ingredients into wet and gently stir (by hand) after each addition. Add the walnuts and blend gently.
  • Divide the batter equally between 2 greased (Crisco) and flour-dusted 5 by 9 inch loaf pans. Bake for 1 hour or until a wooden pick inserted in to the center comes out clean. Cool in pans for 10-15 minutes. Turn out onto wire racks to cool thoroughly.

We love zucchini bread in the summer. It's a simple quick bread that can be served for breakfast or a snack. The pineapple and zucchini make this a super moist zucchini bread. Since it makes two loaves, keep one for yourself and share one with a friend.

3 c all-purpose flour
2 tsp baking soda
1 tsp cinnamon
1 tsp salt
1/2 tsp baking powder
1 c chopped walnuts
3 large eggs
1 1/2 c brown sugar, firmly packed
1 c vegetable oil
1 can(s) pineapple tidbits, do not drain (8 oz)
2 c shredded zucchini
1/2 c milk

Steps:

  • 1. Preheat oven at 350 degrees. Put all dry ingredients together and set aside.
  • 2. Mix together vegetable oil and eggs until frothy. Add sugar and mix well.
  • 3. Add zucchini and pineapple into the mixture.
  • 4. Add dry ingredients (1 cup at a time). Add walnuts - mix until incorporated. Once mixed together, add milk and mix lightly.
  • 5. In a sprayed loaf pan, pour bread mixture about 3/4 full. This recipe will make 2 loaves. Place in preheated oven 350 degrees for 45 minutes - 1 hour.

2 cups zucchini, shredded
1 (8 ounce) can crushed pineapple, drained
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon ground cloves
1 -2 teaspoon orange zest
1 cup walnuts, finely chopped

Steps:

  • Beat eggs in a large bowl to blend.
  • Add oil, sugar, and vanilla and beat until thick and foamy.
  • Stir in zucchini and pineapple.
  • In a separate bowl combine flour, baking soda, salt, baking powder, cinnamon, nutmeg, cloves, orange zest, and nuts.
  • Stir gently into zucchini mixture to blend.
  • Bake in 2 greased loaf pans at 350 degrees.
  • Check after 50 minutes by testing with a toothpick, if toothpick comes out clean bread is done, if not put back in for another 5 minutes.
  • Cool 10 minutes.
  • * For 4 small loaves, bake approximately 35 - 40 minutes.

just my fiddling with a bunch of recipes, I never eat breads with out toasting them so I really cant say how it would taste just out of the oven but we did like this bread toasted.

4 large eggs
3 c shredded zucchini
1 c sugar free applesauce
1 15oz can(s) crushed pineapple drained
2 tsp vanilla
3 c flour
1 1/2 tsp freshly grated cinnamon
3/4 tsp freshly ground nutmeg
1 tsp salt
1 c white sugar
1 c brown sugar
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 c walnut pieces
1 c dried cranberries

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Spray pans with cooking spray dust with flour or a mixture of cinnamon & sugar. My pans measure 8x3 but just use what ever size you have and tooth pick or knife check it after 30 min then go from there
  • 3. Mix the first 5 ingredients.
  • 4. In a separate bowl mix the next 8 ingredients.
  • 5. Mix the dry into the wet do not over mix.
  • 6. Bake for 50 to 60 minutes until a knife comes out clean. Cool and enjoy.

Tips:

  • Use fresh zucchini and pineapple. This will give your bread the best flavor and texture.
  • Grate the zucchini and pineapple finely. This will help them evenly distribute throughout the bread.
  • Don't overmix the batter. Overmixing can make the bread tough.
