1 small onion, chopped
1 clove garlic, minced
2 small zucchini, cubed
1 teaspoon tomato paste
1 beefsteak tomato, cubed
1 teaspoon herbes de Provence, or more to taste
salt and freshly ground black pepper to taste
1 pinch white sugar
1 tablespoon chopped fresh basil leaves, or to taste

Steps:

  • Heat olive oil in a large skillet and cook onion until soft and translucent, about 5 minutes. Add garlic and cook for 30 seconds. Add zucchini and cook until softened, about 3 minutes. Stir in tomato paste and tomato. Season with herbes de provence, salt, black pepper, and sugar. Stir in basil and serve.

2 medium zucchini, coarsely grated
100 g prosciutto, finely chopped
3 spring onions, finely chopped
2 tablespoons sun-dried tomatoes, roughly chopped
fresh ground black pepper
6 eggs, lightly whisked
240 g sour cream
3 teaspoons parsley, finely chopped
1 garlic clove, finely crushed
1/4 cup cheddar cheese, finely grated
1/4 cup gruyere, finely shredded
1/4 cup parmesan cheese, finely shredded

Steps:

  • Preheat oven to 180°C Brush a square 19cm non-stick cake pan with oil to lightly grease it.
  • Combine zucchini, prosciutto spring onions and sun driedtomatoes in a bowl. Spoon over base of prepared pan and season with pepper.

1 large fresh zucchini
1 can tomatoes seasoned with basil garlic & oregano
1 medium onion, chopped fine
1 clove garlic, minced
low-fat parmesan cheese
1/4 teaspoon garlic salt, with parsley seasoning (Lowrey's)
fresh basil
fresh oregano
salt and pepper
pam butter-flavored cooking spray

Steps:

  • Chop finely the onion.
  • Slice the zucchini (not to thick).

3/4 pound cut ziti (zititagliata)
5 plum tomatoes, about 1 pound, cores removed
24 asparagus spears, about 1 1/2 pounds
1/4 pound very thin slices of prosciutto
Salt to taste if desired
1/4 cup olive oil
1 tablespoon finely minced garlic
Freshly ground pepper to taste
1 1/2 cups heavy cream
1/2 cup coarsely chopped fresh basil
1/4 cup freshly grated Parmesan cheese

Steps:

  • Bring 4 quarts of water to a boil for cooking the ziti and vegetables.
  • Cut the tomatoes in 1/2-inch cubes. There should be about 3 cups.
  • Scrape the ends of the asparagus spears and cut off and discard about 2 inches of the tough bottoms. Cut off and reserve the asparagus tips, each about 2 inches long. Cut the center portion of the asparagus on the bias into 1-inch pieces. There should be about 4 cups of asparagus, including the tips.
  • Stack the prosciutto slices and cut them in 1/4-inch-wide strips. There should be about 1 1/4 cups.
  • Drop the asparagus pieces into the boiling water and cook 3 minutes. Scoop out the asparagus and set aside. Allow the water to continue to boil.
  • To the boiling water add salt and the ziti. When the water returns to a boil cook the ziti to the desired degree of doneness, about 12 minutes or longer. Scoop out and reserve Y cup of the cooking liquid. Set aside.
  • Meanwhile, heat the oil in a large skillet and add the garlic. Cook briefly, stirring, and add the prosciutto, stirring. Add the tomatoes, salt and pepper and cook, stirring occasionally, about 3 minutes. Add the cream and bring to a boil. Drain the ziti, add it to the prosciutto mixture and stir. Add the asparagus pieces and the basil. Add the reserved Y cup of cooking liquid. Stir to blend and sprinkle with cheese. Toss and serve.

2 each ciabatta rolls, sliced in half
5 thin slices provolone cheese
4 thin slices deli turkey
4 thin slices deli ham
4 thin slices soppressata
4 thin slices prosciutto
16 slices mini pepperoni
¼ cup grated Parmesan cheese, or to taste
1 medium tomato, thinly sliced
1 drizzle olive oil, or to taste
salt and freshly ground black pepper to taste
½ cup mayonnaise
1 teaspoon red wine vinegar, or more to taste
1 clove garlic, grated
1 teaspoon dried oregano
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 pinch red pepper flakes, or to taste
¼ head iceberg lettuce, shredded
½ medium red onion, thinly sliced
¼ cup sliced pepperoncini peppers, drained

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with foil or parchment paper.
  • Place sliced rolls on the prepared baking sheet (if the top half of roll rocks from side to side too much, slice a tiny bit of the top off). Place 1 slice of provolone on each slice of bread. Tear up the remaining slice of provolone to cover any open bread areas.
  • Bake in the preheated oven until melted (not browned), about 8 minutes. Remove from oven; leave the oven on.

  • While slices bake, make the grinder salad. Add mayonnaise, red wine vinegar, garlic, oregano, salt, pepper, and pepper flakes to a bowl. Whisk to combine.
  • Add lettuce, onion, and pepperoncinis to the dressing. Toss to coat.
  • Remove sandwiches from the oven. Top 2 of the ciabatta slices with tomato slices. Using tongs, place a layer of salad on top of the tomatoes. Sprinkle with more Parmesan cheese.
  • Place the non-salad slices on top of the salad ones. Cut each sandwich in half and serve.
