This is, by far, my family's favorite soup. It can be served either hot or cold. We love to make huge batches when the zucchini in our garden is in season and then we freeze the extra. Awesome with a loaf of crusty bread for dipping!

Tips:

  • Use fresh zucchini: The fresher the zucchini, the better the soup will taste. Look for zucchini that is firm and has a deep green color.
  • Don't peel the zucchini: The skin of the zucchini is full of nutrients, so there's no need to peel it. Just wash it well and chop it into small pieces.
  • Use a variety of vegetables: In addition to zucchini, this soup is also made with carrots, celery, and onion. You can also add other vegetables, such as potatoes, green beans, or corn.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality broth. You can use chicken broth, vegetable broth, or even water. If you're using water, be sure to add some salt and pepper to taste.
  • Simmer the soup for at least 30 minutes: This will allow the flavors to develop and the vegetables to soften.
  • Add the farina towards the end of cooking: Farina is a type of wheat flour that is used to thicken soups and stews. It's important to add it towards the end of cooking so that it doesn't overcook and become gluey.
  • Season the soup to taste: Once the soup is cooked, season it to taste with salt, pepper, and other spices. You can also add a squeeze of lemon juice or a dollop of sour cream.

Conclusion:

Zucchini soup with farina is a delicious, healthy, and easy-to-make soup that is perfect for a quick and easy meal. It's also a great way to use up leftover zucchini. This soup is also a good source of vitamins, minerals, and fiber. So next time you're looking for a healthy and satisfying soup, give zucchini soup with farina a try.
